These berry cute melting moments are as pretty as they are delicious. Buttery, melt-in-your-mouth biscuits sandwiched with a sweet berry filling—they’re perfect for gifting, afternoon tea, or a fun weekend bake with the kids.

If you've been visiting here for a while then you'll know that Will is quite into golf. He's so into it that he'll get up at 5am on the weekend in the freezing cold. There aren't many things that would make me do that.
Seeing as we've been overseas then moving house and getting lots of new house stuff sorted he hasn't played for a while but got his fix on Saturday and Sunday mornings.
This left me as a lady of leisure. We are a one-car household so if Will's at golf, I'm pretty much housebound unless someone wants to come and whisk me away but don't worry, I love being home alone.
I'm not one to get bored although I do tend to talk the ear off the next person I see if I've been solitary for hours on end (which is most days working from home).

On Saturday morning I pottered in the garden, planting more seeds in my vege garden and baked my ciabattas so having caught up on magazine reading by mid-Sunday morning there was only one thing left to do... bake.
I have a different technique of ear-marking 'to make' recipes every few weeks and at the moment, I have a big list from 2 books and a magazine that I'm going to try and get through before moving onto the next 3.
That's where berry cute melting moments came from. Now firstly, how could anyone resist such a name? To me, the photo looked like little teeny tiny biscuit versions of scrumptious scones and that description is not far off.
If you whip butter and icing sugar together for long enough they form a whipped cream-like texture good enough to eat by the spoonful and match perfectly with sweet strawberry or raspberry jam.

It gave me an excuse to crack into my supply of stolen (not really stolen, I just didn't eat mine each morning) hotel buffet jams that I'd forgotten about until unpacking them in the new house.
They were little English jams which I guess is rather fitting seeing as last night a little prince was born.

Here's to you little prince. I'm going to have another berry cute melting moment and a cup of tea to toast to your arrival.
Now just so I have proof my guess for the name is Edward. I had the boy part right so fingers crossed it's two for two. What is everyone else's guess?

Recipe

Berry cute melting moments
Ingredients
Biscuits
- 200 g butter
- 2 teaspoon vanilla bean paste
- ⅓ cup caster superfine sugar
- 1 ½ cups plain AP flour
- ½ cup rice or cornflour
Filling
- 50 g 2oz butter, softened
- ⅓ cup icing confectioner's sugar
- ½ cup strawberry or raspberry jam
- Extra icing sugar for dusting
Instructions
Biscuits
- Pre-heat the oven to 130C (265F) fan-forced and line two baking trays with baking paper.
- In the bowl of an electric mixer, beat the butter, vanilla and caster sugar together for 5 minutes.
- Scrape down the bowl and the beater and beat for another 30 seconds.
- Add the flours and mix them through slowly until a dough forms.
- Using two level teaspoons of dough at a time, roll it into balls and flatten slightly then place on the oven trays leaving 2cm between each one.
- Gently press each one with the back of a fork to make a pretty indent
- Bake for 15 minutes or until firm but not quite golden.
- Leave to rest on the trays for 5 minutes then transfer to a wire rack to cool completely.
Filling
- In the bowl of an electric mixer, beat the butter until pale and creamy.
- Add the icing sugar and beat until the mixture is really fluffy and white.
- When the biscuits have cooled, spread one half with icing and the other half with jam and sandwich them together.
- Dust with icing sugar to serve
