Potato bake would have to be one of my favourite side dishes.

I could even eat it as a main very easily.

This simple recipe I have to credit to Mum as I think she invented it.

Why make this recipe?

TASTE - it is the most delicious potato bake I've ever had & I've sampled my fair share of potato bakes.

SIMPLE - there are just 8 ingredients and that includes the salt & pepper & potatoes!

STAPLE INGREDIENTS - You probably have everything you need in the kitchen.

QUICK - depending how fast you are at chopping, it takes just a few minutes to prepare and get in the oven.

It's very easy and sooo good!

Ingredients

  • Potatoes - obviously! You can use a mixture of white and sweet potato. Below we've shared which ones give the best flavour.
  • Cream - full fat regular cream (not thickened). I like to keep a few tubs in the freezer.
  • Parmesan - helps it brown on top and form nice crispy bits.
  • Garlic - feel free to add extra if you're a garlic fan.
  • Nutmeg - we like to use freshly grated but the dried type in a jar is just as good.
  • Salt & pepper - to taste. Preferably a good quality sea salt and freshly-ground black pepper.

Which potatoes are best for potato bake?

The best types of potatoes to use are the all-purpose varieties. These include:

  • Desiree
  • Pontiac
  • Sebago
  • Yukon gold

My favourite is the good old big dirty potato.

FAQs

Do you need to peel the potatoes for potato bake?

No need to peel them unless you really want to.
We use organic potatoes for our potato bake so we know there are no nasties in the soil. In fact there is potentially a bit of extra goodness in there if you leave a bit of skin on.
If I was using regular potatoes I would peel them.

Instructions

Firstly, slice up the potatoes thinly and layer them on the bottom of the baking dish.

You can use a knife or something like a mandolin.

We've just discovered using the slicer attachment on the Kitchenaid and it's a game changer!

I generally use 1 big potato per person.

Easy potato bake recipe

In a jug, mix up the cream, garlic, nutmeg, salt, pepper and grated parmesan.

Pour the mixture over the potatoes.

Bake in a 180C degree (fan-forced) oven for 35-40 minutes or until the potatoes are golden and soft. To make sure it's ready, stick a fork through the middle. If it goes in easily to the bottom it's ready. If it requires a bit of force, it needs a little longer in the oven.

Our favourite thing to serve potato bake with is roast chicken or Christmas ham.

Enjoy!
