Recipe Ingredients
To make chocolate mousse you will need just 5 ingredients:
- Sugar - raw sugar, caster sugar or even rapadura sugar will work well for this. You can also cut it back a little if you want to reduce the sugar or even use honey.
- Chocolate - dark gives the best flavour for this. Milk chocolate is a little bit too sweet but you can do a combo of the two.
- Eggs - separated. Make sure you don't get any yolk in the white.
- Cream - full fat cream is best.
- Salt - we like to use Celtic sea salt but any will do.
Flavour Variations
If you want to mix up the flavour some options you could include are:
- orange zest
- vanilla beans
- cinnamon powder
- a splash of Bailey's or Cointreau for a grown-up version.

How To Make Thermomix Chocolate Mousse

Step 1 - Place sugar into bowl of the Thermomix & put the lid on. Mix for 10 sec/speed 10.
Step 2 - Scrape down sides of mixing bowl with a spatula.

Step 3 - Add the chocolate chocolate and cream and cook 4 min/50°C/speed 2.
Step 4 - Scrape the sides again.

Step 5 - Add the egg yolks and mix 15 sec/speed 4.
Step 6 - Transfer the chocolate mixture into a medium-sized bowl and set aside.
Rinse the Thermomix bowl then add some hot water and washing up liquid - whiz on high for a few seconds then completely wash and dry.

Step 7 - Insert the butterfly whisk. Add the egg whites and salt.
Step 8 - Whip 3 min/speed 3.5 or until stiff.
Remove the butterfly whisk.

Step 9 - Carefully fold the whipped egg whites into the chocolate mixture using a spatular. Be careful not to over mix.
Step 10 - It makes it easier to fold in a little bit first then add the rest.

Step 11 - Pour the mixture into a container.
Step 12 - Or into individual serving cups, cover and refrigerate until set (a few hours). These dessert cups would look very cute & are perfect for a dinner party.
How To Make Chocolate Mousse Without A Thermomix
- use icing sugar in place of regular sugar
- complete the first step in a saucepan on the stove
- whip the egg whites using a whisk or mixer
- fold the egg whites into the melted chocolate mixture and then refrigerate as per the Thermomix instructions.
Preparation Tip
Make it at least 4 hours before serving to make sure it sets.

You sure can. Some suggestions include: orange zest (hello Jaffa mousse), peppermint, cinnamon powder, vanilla, a hint of chili or even Bailey's for a grown up version.
If you used dairy-free chocolate (it's not too hard to find dairy-free dark chocolate) and coconut cream instead of dairy cream you can make dairy free mousse.

- 200 g dark chocolate min. 50% cocoa, cut into pieces (2-3 cm)
- 100 g pouring whipping cream
- 4 eggs separated
- 1 pinch salt
