min. 50% cocoa, cut into pieces (2-3 cm)

Instructions
Place sugar into bowl of the Thermomix & put the lid on. Mix for 10 sec/speed 10.
Scrape down sides of mixing bowl with a spatula.
Add the chocolate chocolate and cream and cook 4 min/50°C/speed 2.
Add the egg yolks and mix 15 sec/speed 4.
Transfer the chocolate mixture into a medium-sized bowl and set aside.
Rinse the Thermomix bowl then add some hot water and washing up liquid - whiz on high for a few seconds then completely wash and dry.
Insert the butterfly whisk.
Add the egg whites and salt and whip 3 min/speed 3.5 or until stiff.
Remove the butterfly whisk.
Carefully fold the whipped egg whites into the chocolate mixture using a spatular. Be careful not to over mix.
Divide into 6 serving bowls or jars - or place mixture into a large container.
Cover and refrigerate for at least 3 hours before serving cold.
