Cookies and cream cupcakes
Obsessions come in waves for me. There was the great macaron obsession of 2010/11 then came the great halloumi obsession of 2011. Cupcakes are my current obsession. In the last few weeks I’ve made at least five different cupcakes (yep lots more to share).
Creating things in multiples always seems to make things look so pretty and uniform and for some reason that’s what I’m craving at the moment (maybe Freud would read something into that?).
Cookies and cream cupcakes
Pinterest was my inspiration for this little creation. I know, surprise, surprise! I’m always on the look out for mini versions of things. Why is everything so much more adorable and desirable in mini version?
Am I the only one who walks around the shops with light bulbs going off in my head? I’ll be walking past the biscuit aisle and BAM a Pinterest image will pop into my head and I’ll have to grab the inspirational item and rush home to recreate the image.
Mini Oreos gave me the flash of vision on last week’s shopping trip and so cookies and cream cupcakes were born.
Ready for baking
I used my new never-fail cupcake recipe as the base for these but switched out 50g of the butter for 50g of melted dark chocolate. It gave them just a light chocolatey flavour.
Perfect little tops
I’m on a five for five score with this recipe, consistently producing cute, round-topped nearly perfect cupcakes. Ok so it’s not smooth yet but who cares when you’re going to cover it up with icing right?
Cooling
The icing is just a basic butter-cream with a bit of cream cheese mixed in to cut the sweetness a little bit. Don’t for get to put the cookies in the cream and add some crumbled up Oreos to the icing. Just half a biscuit gave a good little speckle to the icing.
Iced
I used a fat, round icing tip to pipe the icing onto each cupcake just a little bit in from the edges. You can cover the whole cake if you like but I like to leave a little bit showing.
Topped
For the finishing touch – a mini Oreo on top. I thought I’d found something special when I spotted these at Aldi but you can get them at any supermarket in with all the other snack-sized biscuits.

Cookies and cream icing
Ingredients
- 1 cup icing sugar
- 75g butter
- 25g cream cheese
- milk for consistency
- 1/2 Oreo, crumbled
- Mini Oreos to serve
Instructions
- Beat the butter and cream cheese with an electric mixer until smooth.
- Gradually add the icing sugar and add milk if needed to get to the right consistency.
- Keep beating until the mixture is white.
- Fold through the crumbled Oreo.
- Pipe the icing onto the cupcakes and then top each one with a mini Oreo.
