Look no further for your next indulgent gluten-free dessert. Gluten free blondies with chocolate chunks will definitely hit the spot.

I won't lie, the first time I made these I was pretty put off by the idea of all that tahini but you have to trust me, these blondies are irresistible. The Tahini adds just the right amount of nuttiness without being overpowering.

Ingredients

To make this Paleo blondies recipe you will need: 

  • Hulled tahini
  • Coconut flour
  • Ghee
  • Rapadura sugar
  • Coconut cream -  room temperature
  • Water - room temperature
  • Eggs
  • Baking powder
  • Vanilla extract - here's how to make your own vanilla extract
  • Salt
  • Chopped chocolate - I like to use dark chocolate

Substitutions

There are lots of substitutions you can make if you don't have the exact ingredients for these easy gluten free blondies.

TAHINI - substitute with peanut butter or another nut butter or seed spread. The Tahini does give it a lovely flavour though.

COCONUT FLOUR - be careful substituting this as it doesn't really have anything that acts in quite the same way. If using regular flour or a gluten free flour alternative you would need to increase it about 4 times.

GHEE - you can use butter instead.

RAPADURA SUGAR - use honey or any other type of sugar. Brown sugar will work but they won't be Paleo. 

CHOPPED CHOCOLATE - use whichever you have on hand or use chocolate chips.

Tip

Don't forget to save some chocolate to sprinkle on the top of the batter before you put it in the oven!

Serving

I have to say, this is best served at room temperature or cold rather than warm from the oven.

Storage

Store in an airtight container in the fridge or freeze in portions.

Brownies are made with melted chocolate or cocoa in the mixture where blondies are a white slice and more dense and chewy.

Ingredients

  • 1 cup hulled tahini
  • 3 tablespoon coocnut flour
  • 4 tablespoon ghee or butter melted
  • 4 tablespoon rapadura sugar or honey or other sugar
  • ¼ cup coconut cream room temperature
  • ¼ cup water room temperature
  • 2 eggs
  • 1 teaspoon baking powder
  • 2 teaspoon vanilla extract
  • Pinch of salt
  • ¼-1/2 cup of chopped chocolate - I like to use dark chocolate

Instructions

  • Preheat your oven to 170C fan-forced & grease and line a large loaf tin.
  • Combine the sweetener and eggs (in a bowl with a whisk, blender or Thermomix) until smooth.
  • Add the melted ghee and whisk/beat again just until they cream together and thicken a little. Don't overmix.
  • Add the rest of the ingredients (except the chocolate) and mix just until combined.
  • Gentry fold in the chocolate (save a few to scatter on the top).
  • Transfer the batter to the prepared tin then sprinkle with the rest of the chocolate.
  • Bake for 25 minutes or until golden.
