I really should have called my friend Miss Victoria, Kiwi being the good Kiwi she is. She introduced me to quite a manner of exciting New Zealand things like the Edmond's Cookery Book which I fell in love with after the first recipe.
Remember Afghan cookies? If you don't then you must check them out. They seem rather simple given that a large portion of the ingredients consist of cornflakes but they are irresistible.

When we caught up earlier in the year she had just been to NZ and collected a few of their famous goodies. I was lucky enough to get to sample a Cookie Time cookies.
I don't know that it is about them that is so good but they're nice and big (tick), contain chunks of chocolate not tiny flakes (tick) they're crunchy but not break-your-teeth-crunchy (tick) and they're not stomach pain-inducingly sweet.
Her husband absolutely loves them and for his Birthday a couple of weeks ago, requested a stack of cookies instead of a Birthday cake. Great idea huh?

I eagerly followed the cookie time cookie recipe trial through photos hoping they'd get the tick of approval so I could attempt them myself and that they did. 'The flavour was spot on,' she texted.
The only thing a little different from the original was that they were still slightly chewy on the inside. I baked mine at a lower temperature for a little longer to make them a bit more crunchy and although mine weren't all that thick, they still ticked all the boxes.
They even smiled... see the smiley cookie in the photo? I didn't even notice the little guy until I was editing.
These are the type of biscuits you make for a serious treat. They turn out nice and big so you feel extra special indulging in one. I'd encourage you to use good dark chocolate in them just to add that little something extra. Enjoy!

Recipe

Choc chunk cookies
Ingredients
- 225 g butter room temperature
- 1¼ cups packed brown sugar
- 2 large free-range eggs
- 2 teaspoon vanilla extract
- 2¼ cups plain AP flour
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 250 g ½ lb roughly chopped dark chocolate
Instructions
- In the bowl of an electric mixer, beat the butter until light and creamy then add the brown sugar and beat until fluffy.
- Scrape down the bowl then add the eggs and vanilla, beat them through and scrape the bowl again.
- Add the flour, baking powder, soda and salt and mix on low speed until combined.
- Add the chocolate and mix it through until even distributed.
- Cover the bowl and pop it in the fridge for a hour.
- Pre-heat the oven to 160°C (350F) fan-forced and line two baking trays with baking paper.
- Using a heaped tablespoon of dough at a time, roll it into balls and place on the tray then flatten to about 2cm.
- Repeat with the rest of the dough leaving at least 3cm between each ball as they will spread.
- Bake the biscuits for 15-20 minutes or until golden.
- Leave them on the trays for 5 minutes then transfer to a wire rack to cool completely.

I love that Edmond's Cookbook. My grandmother gave it to me many years ago. She used to cook many of their recipes. These biscuits certainly sound like they tick all the boxes. I like a cookie with a bit of crunch xx
