Here’s yet another of my strange pre-foodie Claire things.

I didn’t like scones. Well to be more specific I’d eat scones if they were all that was available and I was hungry but I didn’t like jam or cream so that made them pretty boring. Yes I told you I was a weirdo with my eating habits.

Fast forward a few years and I can’t get enough of scones (pumpkin scones are a bit of a favourite) I’m always looking for an excuse to make them or order them (and now I’m craving scones!) and my favourite way to enjoy them is smothered in a thick coating of whipped cream and raspberry jam although strawberry will do if that’s all there is.

Jam can be pretty time consuming to make and all that sugar kind of turns me off (not my taste buds, just my very little ‘be healthy’ voice). That was until I discovered that you can make jam using chia seeds to thicken it effectively making a raw paleo raspberry jam.

I was pretty sceptical when I first heard about it but I decided to try it for myself and it was fantastic. I added a little maple syrup for extra sweetness and even Will commented on how good the jam was.

It goes perfectly on my pumpkin scones (which are definitely not Paleo!)

The only ingredients are raspberries, chia seeds and maple syrup so you can even call the jam healthy. Unfortunately the cream and scones don’t pass any diet tests but I don’t like diets anyway. Enjoy!

Paleo raspberry jam

Yield: 1 cup

Ingredients

  • 1 cup raspberries
  • 1 tbps chia
  • 1 tbsp water
  • 1 tbsp maple syrup

Instructions

  1. Crush the raspberries then stir through the rest of the ingredients.
  2. Refrigerate for at least an hour before serving.
