I was going to start this post off with an apology for the terrible photos but then I thought about it. I never wanted Claire K Creations to be too fancy. I am a pretty laid back sort of person, as you've probably gathered if you've been visiting here for a while.
My recipes are nearly always simple and achievable and I'd like to think that this comes across in the blog's personality.
One thing about blogging is that it's hard to switch off. There's not really such a thing as a day off because there are always recipe to make, posts to write, comments to approve and social media to update.
Sometimes I like to have a night off being a blogger and just be regular Claire who takes the odd snapshot of her dinner.

Last Friday night we had some friends to dinner who we hadn't seen in a while so the last thing I wanted to do was waste time setting up fancy photos and risk dinner getting cold when I could be chatting away.
That's why today you're getting a scrumptious recipe with average photos. I hope by now you know me well enough to be convinced I'll only share a recipe I think is really good. Pretty photos are a bonus.

I'll start with the main meal which, thanks to my make-it-up-as-she-goes mother, I don't have a recipe for but you might be inspired. It all started when I saw this recipe for Beef Mince pie on Gourmet Wog. I'd never thought to make a pie in that sort of free-form shape before and my mind got ticking.
Lisa's recipe looked wonderful but on this occasion, my brain went to the giant serving of beef shin casserole in my freezer. The day we moved, I asked mum if she'd pretty please make us dinner because I knew I'd be too exhausted to cook.
She went gourmet and cooked up a huge slow-cooker full of the tastiest stew and brought us over 4 double serves so we'd have some left for the freezer.
I defrosted it during the day, shredded up the meat and stirred through about a cup full of chopped up mushrooms then layered it between two sheets of puff pastry and baked it for 45 minutes.

The result was fantastic and I can't wait to do it with some different flavour combinations. The bottom pastry didn't get very crispy though so I'll have to look into the reason behind that.

For dessert, it had to be a lemon dish of course. I don't own a big pudding baking dish would you believe so I improvised with a large saucepan.
I'm not sure if it's advised, but I made mine in the afternoon and left it, unbaked on the bench ready to pop in the oven as soon as dinner was ready.
I made the small mistake of not checking on it until the specified time (usually for first-time recipes I check 10 minutes before) and it got a little crispy on top but nothing a bit of icing sugar couldn't fix.
If you've never had lemon delicious (I hadn't) then I'll describe it as sort of a spongey cake-like top with gooey lemon sauce on the bottom.
It was tangy but not sour and sweet enough to satisfy but not so sweet that I couldn't fit in a second helping. Between four of us we managed to polish off the 6-person dessert.
Sadly that is nearly the end of the lemons but don't worry, the tree is covered in flowers and getting ready for round two. Enjoy!
Recipe

Lemon delicious
Ingredients
- Juice and zest of 2 lemons
- 3 free-range eggs separated
- 70 g 2.5oz butter
- 175 g 6oz caster sugar
- 3 tablespoon sifted plain AP flour
- 185 ml 6oz milk
Instructions
- Pre-heat the oven to 160C (350F) fan-forced and butter a large oven-proof dish.
- In the bowl of an electric mixer, beat the butter, sugar and lemon zest together until light and fluffy.
- Change the beater over to the whisk.
- Add the egg yolks and whisk to combine.
- Whisk through half the flour then half the milk and repeat.
- Add the lemon juice and beat until well combined.
- In a separate bowl, whisk the egg whites until stiff peaks form.
- Fold the egg whites through the rest of the batter then pour it all into the pudding dish.
- Place the dish in a shallow baking pan and fill with hot water until it reaches half way up the sides of the pudding dish.
- Bake for 1 hour.

ooooh Beef Shin Casserole would be most scrumptious in pie Claire, clever thinking!! Maybe the filling was too wet for the pie and that could be why it didn't crisp. I don't know, regardless, your version looks wonderfully golden on top x

Lemon delicious is one of my all time favourites Claire. Its very hard when people visit isn't it because I don't want to stop and take photos but I do want a keep sake. Invariably when this happens I end up wih worthless photos. Yours are at least usable !!
