Ingredients

Juice and zest of 2 lemons

Instructions
Pre-heat the oven to 160C (350F) fan-forced and butter a large oven-proof dish.
In the bowl of an electric mixer, beat the butter, sugar and lemon zest together until light and fluffy.
Change the beater over to the whisk.
Add the egg yolks and whisk to combine.
Whisk through half the flour then half the milk and repeat.
Add the lemon juice and beat until well combined.
In a separate bowl, whisk the egg whites until stiff peaks form.
Fold the egg whites through the rest of the batter then pour it all into the pudding dish.
Place the dish in a shallow baking pan and fill with hot water until it reaches half way up the sides of the pudding dish.
Bake for 1 hour.
