Do you eat breakfast? I don’t think I could ever be one of those people who skip it. My stomach would never let me.

Breakfast can be  a bit of a challenge around here lately with three little mouths to feed as well as my own but thankfully the boys are happy with some cereal as entree while I prepare something else.

I have to be quick though especially if bubba is still asleep - I never know when she'll need me.

I try to do what I can the night before and one of my favourites is Bircher muesli.

You can mix up a big batch and have breakfast pretty much ready for most of the week which is very handy when you have other hungry mouths to feed.

Bircher muesli - quick and easy snack.

The other thing I like about this is you can change up the flavours each day.

The base is made of just oats, grated apple and apple juice/water.

Then the next morning you add something to make it creamy (I go with yoghurt), extra fruit and nuts and seeds.

If you're doing individual serves you can do coconut milk or any other type of milk the night before but I wouldn't leave it for more than 24 hours.

My favourite combo is plain Greek yoghurt, raspberries, walnuts and a few seeds sprinkled on top.  

If you have breakfast on the go, you could also make it in individual jars to grab and go. Enjoy!

Ingredients

  • ½ cup oats per serve
  • ½ cup combination of water and apple juice
  • ½ a grated apple or pear per serve
  • favourite nuts and seeds
  • favourite yoghurt
  • berries or other fruit to serve

Instructions

  • The night before, mix up the oats, liquid and apple or pear and cover and refrigerate overnight (this will keep for three days).
  • The next morning add your favourite nuts, seeds, yoghurt and fruit and you’re good to go.
  • If you make up a big batch, just scoop out your serving for the morning before adding all the extras.

    I love a good bircher muesli and this looks like a yummy recipe. I find that the cold press apple juice makes it taste so good! Liz x

    I definitely wouldn't mind having this for breakfast every morning.. love a classic bircher muesli - especially when it looks as beautiful as this.

    I love your presentation. I never had a starving child - I've always had to strap them into the high chair and force them to eat. I do love bircher muesli and this looks wonderful xx
