One of my favourite treats, I blame Dad for this one because he loves them too, is after dinner mints. I could quite happily eat a whole box of them closely followed by mint slice biscuits.
These chocolatey biccies are coated with a drizzle of mint-chocolate icing making them the perfect treat with a cup of tea after a long day.
They'd also make the perfect after dinner treat at a dinner party and nice alternative to the usual mints. They're really easy to make, with no rolling required. Just mix, blob, bake and drizzle and they're ready to eat.
Why Make These Choc Mint Biscuits
- Mint + Chocolate - the most delicious combo and to me that will always sell me on a recipe.
- Easy to make - the kids can easily help & there's no dough ball rolling.
- Simple ingredients - nothing fancy, you can get everything at the supermarket.

Recipe Ingredients

- Chocolate - use chopped chocolate or chocolate chips. You can use dark/milk/white or a combo. We prefer just dark though.
- Peppermint - we used food-grade essential oil. You can use peppermint essence from the supermarket.
- Icing sugar - this is also called Confectioners Or Powdered Sugar.
- Brown sugar - it's best to stick with this type as using raw or caster sugar will alter the texture & make them too crunchy.
- Cocoa - we use cacao powder as that's usually what we have. Either work.
How To Make Choc Mint Biscuits

Step 1 - Beat the butter and sugar together until light and creamy.
Step 2 - Scrape down the sides of the bowl.

Step 3 - Add the egg and vanilla and mix them through.
Step 4 - Add the dry ingredients (except the chocolate) and mix it all together.

Step 5 - Scrape the sides of the bowl down.
Step 6 - Add the chocolate.

Step 7 - Fold the chocolate through the dough.
Step 8 - Using a level tablespoon of dough, blob it onto the lined baking tray.

Step 9 - Bake for 12 minutes at 180C fan-forced and leave to rest on the tray for a few minutes.
Step 10 - Transfer to a wire rack to cool completely.

Step 11 - Make the icing by combining all the ingredients in a bowl or jug.
Step 12 - Mix until smooth.

Step 13 - Once the cookies are cool, place a sheet of baking paper under the cooling rack.
Step 14 - Drizzle the icing over the cookies.
Mess-Free Tip
Place a sheet of baking paper under the cooling rack to catch all the drips.
Serve them with a cup of tea or after dinner coffee. Enjoy!

Yes you sure can. Use whatever chocolate you like or have on hand. You could even add peppermint to melted white chocolate to make the drizzle if you want it to be white.
Sure. You won't get as much of the little crunchy bits around the biscuit though. If you like them smooth though, go for it!

Ingredients
FOR THE BISCUIT
- 100 g 3.5oz soft butter
- 150 g 5.3oz brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 150 g 5.3oz plain AP flour
- 35 g 1.3oz cocoa powder
- ½ teaspoon baking powder
- 200 g 7oz dark chocolate chips (or you can mix it up with dark and milk chocolate)
FOR THE GLAZE:
- 75 g 2.7oz icing sugar
- 1 x 15ml tablespoon cocoa sieved
- 2 x 15ml tablespoons boiling water
- ¼ teaspoon peppermint extract I used peppermint essence
Instructions
- Pre-heat the oven to 180C (320F) fan-forced and line two baking trays with baking paper.
- (All of these steps can be done by hand with a bit of muscle)
- In the bow of an electric mixer, beat the butter and sugar together until they are light and creamy then, with the motor running, add the egg and vanilla.
- Sift all the dry ingredients together and then, with the motor running, slowly add them to the bowl until they are mixed in.
- Remove the bowl from the stand and stir in the chocolate chips.
- Using a heaped teaspoon of dough at a time, spoon blobs of dough onto the lined trays leaving about 2cm between each one.
- Bake the cookies for 12 minutes then leave them to rest on the trays for 5 minutes.
- Transfer them to a wire rack.
- To make the choc-mint drizzle, combine all the ingredients in a heat-proof bowl or jug. Stir it all together and add a little extra boiling water at a time to get it to drizzle consistency.
- Place a piece of paper under the cooling rack to catch the drips and drizzle the cookies with the icing (they don't need to have cooled).
- Store the cookies in an airtight container for up to 3 days.

I didn't realise today was the last day of summer. Wow, that went by quick, and as you say it didn't really feel like summer. Especially with so much rain.
How exciting knowing your wedding is only 2 months away. I think it's great you are still cooking up treats. So many brides deprive themselves of treats in the lead up to the big day. Your choc mint cookies look fantastic.
