Spicy sweet potato wedges

When I don't have a side dish planned for dinner I nearly always fall back on what I've been eating my whole life - plain broccoli, beans, carrot or corn (or a combination) steamed or some sort of potato. I had to spice up my sides, literally, for Thanksgiving on the weekend and decided it was time to try Martha Stewart's spicy sweet potato wedges that I had pinned quite a while ago. Spicy is definitely the word for them, they pack a punch but in a very good way. I've never had potato with lime before but it complimented them perfectly.

The ingredients

I was super organised with my Thanksgiving dinner so I didn't start to think of it as a chore. I really wanted to get all the vegetables from the farmers markets which is on Sundays so I prepared all the veges on Monday and vacuum packed them ready for dinner the following Saturday. I also made up the spice mix for the potatoes.

Spice up the potato

The added bonus of preparing the potatoes in a vacuum bag is that I could spice them up in it too. I threw the oil and all the spices in and gave it a good shake around.

Ready for baking

Sorry the ugly dish cloth is in the background. I'm not all that good at taking good pics, talking and eating all at the same time. Lay them all out in a single layer on a lined baking tray and then bake them for 25-30 minutes in a 180C fan-forced oven.

Serve the potato wedges with lime wedges. Enjoy!

Ingredients

  • 4 medium sweet potatoes about 1kg, washed and cut into wedges
  • 3 tablespoons olive oil
  • 2 teaspoon ground cumin
  • 1 teaspoon hot paprika
  • 1 teaspoon ground ginger
  • ¼ teaspoon cayenne pepper

Instructions

  • Pre-heat the oven to 180C(356F) fan-forced and line a baking tray with baking paper.
  • Place the wedges in a bowl or bag and toss through the oil, spices and salt and pepper.
  • Tip the wedges out onto the lined tray into a single layer.
  • Bake them for 25-30 minutes or until they start to turn golden.
  • Serve the wedges with lime wedges.

      Yes nice and healthy. It's nearly over-eating season though so you're just getting into practice.
