
Just a quick one from me today. This dinner was just a make-up-as-you-go meal so I didn't really take photos but it was too good not to share.

I've been trying to use different meats in different ways as my default is quite often chicken so I buy a bit of something different each week. Last week I got some lamb fillets.

I sliced them up into 3cm (or thereabouts) cubes and marinated them in crushed garlic, lemon juice and olive oil for an hour. Then I threaded them onto skewers alternating with chunks of capsicum and haloumi and sprinkled a little bit of dried oregano on top.

The only took a couple of minutes each side on the barbeque and dinner was ready.

I served them up with roast potato, veges and salad and a squeeze of lemon. Enjoy!

Do it Nic! I haven't had lunch yet and you just reminded me that I have halloumi too. Hmm might have to cook it for lunch.

You're right Jen they go perfectly. I must admit the butcher gave me the idea when I bought the lamb. I was asking her which cut was best for skewers and she suggested adding haloumi. I'd just bough a big chunk of it so it was meant to be!
