Chocolate chip macaroons

Whip up a delicious sweet treat of chocolate chip macaroons in no time at all with just four ingredients. Chocolate + coconut = goodness.

Let's take a step back in time, nearly two years back to be precise. So far back in time that I didn't know the difference between a macaron and a macaroon! In fact I don't think I even knew there were two such similar words. Can you believe such a time existed?

Fast forward to now and I'm one of those annoying people who corrects everyone who says macaroon when they really mean macaron.

I sure have learned a lot in the last two years. Possibly the biggest difference between macaroons and macarons, to me anyway, is that macaroons are seriously simple to make. They're also pretty budget friendly and keep for a while.

Twenty minutes and a bit of cooling time is all it takes to make them.

All these pros make them the perfect little edible gift. Did you know there are just 11 weeks (a little less) until Christmas? I've only just started putting my lists and plans together but I think theses might make another appearance.

Of course I can't turn down a party invitation so I'm jumping right in. I'm not sure that I'll be committed to one creation a week, but I'll give it a go.

The ingredients

Another recipe for the four ingredient girls this is - chocolate macaroons. I upped the anti on the chocolate and used Lindt coconut dark chocolate instead of regular chocolate.

Mix it all together

I did say this was a difficult recipe. This is how hard it is - throw everything in a bowl and mix it all together.

Ready for baking

Use about a tablespoon of dough at a dime and roll the mixture into balls. Pop them on a lined baking tray and leave 2cm between each one.

Bake them at 180C fan-forced for 10 minutes or until they turn golden. See, told you it was easy!

Resting

Leave them to sit on the tray for five minutes.

Cooling

Move them over to a wire rack to cool completely.

Package them up for your friends and family before you eat them all. Enjoy!

Chocolate chip macaroons

Ingredients

  • 2 cups desiccated coconut
  • ½ cup caster sugar
  • 2 egg whites
  • ⅓ cup finely chopped dark chocolate I used coconut chocolate

Instructions

  • Pre-heat the oven to 180C fan-forced and line two baking trays with paper.
  • Mix all the ingredients together.
  • Use a level tablespoon of mixture for each one and roll the mixture into a ball.
  • Place on the tray leaving at least 2 centimeters between each ball.
  • Bake for 10 minutes or until they start to turn golden.
  • Leave the baked macaroons on the tray for 5 minutes and then transfer to a wire rack to cool completely.

    Lol! Im TOTALLY one of those people who corrects too. I actually just had an argument in my office with my boss about it. She thought I was being fancy....um no! They're 2 different things!! haha

    I love macaroons (note I put the double o in there!) and yes, they are quite easy to make. I went to a restaurant last night and across the road was one of those 'pop-up' shops and it's all Christmas decorations and they had the lights on all the trees and it looked very pretty but did make me nervous. It's amazing how quickly it all comes around xx

    I've never made chocolate macaroons this way before. They look great. I'm a macaroon/macaron person too but I don't correct anyone. I'm short and within slapping distance.
