My grandma loves black forest cake so when I came across this recipe for black forest slice I knew I had to make it for her. Although she's never given me a bad report on anything that I've made for her this recipe got the best reception I can remember (apart from Nigella's brownies). It was pretty quick to make and came out gooey and indulgent looking.
Grease and line a square slab cake pan. The pan in the photo is the biggest I own. It did the job but a bigger pan would have been more suitable. Don't take too much notice of my ingredients. I am missing the cherries from the collection and the egg whites shouldn't be there!
Beat the eggs, egg yolks and sugar with an electric mixer until they are well combined.
Next, add the melted (cooled) chocolate and beat until combined. I'm not really sure how you are meant to add cooled melted chocolate. If you let it cool it goes hard again. I added mine about 5 minutes after it came out of the microwave.
Next step - add the milk and the cream and mix on low.
Carefully stir the almond meal into the batter.
Add the sifted flour and cocoa to the batter and gently stir it through.
Pour the batter into the tin then sprinkle with the grated chocolate and cherries. Bake for about 25 minutes in a 160C/320F fan-forced oven. I assume it was because I used a smaller tin, but mine took about 35 minutes to cook. Check it with a cake tester before you take it out of the oven.
When the slice is cooked, leave it to rest in the pan for 15 minutes.
When rest time has finished, transfer it to a wire rack to cool completely. If you're serving it as a dessert, cut it up and serve warm with cream or ice-cream. Enjoy!
