Today is my friend's Birthday and of course I jumped at the chance to make her Birthday cake. This cake was inspired by one I saw at Sodapop Design a little while ago.
I made a chocolate mudcake and covered it in white buttercream icing. I then, very gently pressed sponge finger biscuits (you can get them at the supermarket) around the cake and secured them with a ribbon and the good old glue gun. I may or may not have also glued the ribbon to a few of the biscuits to hold it in place. Don't worry I'll make sure no one eats the glue.
I used a potato peeler to shave a block of dark chocolate over the top of the cake. The combination of sponge fingers and chocolate smells amazing. Happy Birthday Belle!

My daughter, Cate, has passed on her excellent Tiramisu recipe - use half espresso and the other strong cocoa/water mix. Use Smooth cream cheese instead of mascarpone as cheaper. This makes a scrumptious dessert for those who find the coffee only Tiramisu a bit too strong. Leave out alcohol for kids.

That's a great idea. I'm not a huge fan of the coffee taste either. I've never thought to use cream cheese instead of mascarpone. I must use it in other recipes too. Thanks for the tips!
