My apologies for the terrible photo. I whipped this dish up last night based on some dying veges I had in the fridge and didn't expect it to be so tasty (I take a photo of everything I make just in case it's one to share). It was so easy to make and you could vary the vegetables based on whatever you have in the fridge. Use whatever pasta you like too. I had two lasagna sheets left over in the fridge that really needed to be used so chopped them up into thin strips just like fresh fettuccine. Enjoy!
Recipe

Ingredients
- 1 red capsicum roughly chopped
- 8 button mushrooms roughly chopped
- 3 green olives chopped
- 2 teaspoon crushed garlic
- 5 tablespoon your favourite tomato pasta sauce
- salt and pepper to season
- pasta for one I used 2 lasagne sheets chopped into thin strips
- ½ tablespoon olive oil
- 1 tablespoon grated parmesan
Instructions
- Heat the olive oil in a large frying pan and cook the garlic for one minute. Add the veges and stir them through then cook on medium, stirring occasionally for 5 minutes.
- Add the pasta sauce and olives and stir them through. Simmer the veges and sauce for about another 15 minutes. Season to taste.
- Meanwhile cook the pasta according to instructions.
- Transfer the cooked pasta and ⅓ of a cup of the cooking liquid to the sauce and stir it all together.
- Serve sprinkled with grated parmesan.

Isn't it great when something you didn't expect to be tasty is delicious? :) Although I know what you mean, sometimes you just aren't prepared to photograph things :P
