Super-quick vegetarian pasta

Ingredients

  • 1 red capsicum roughly chopped
  • 8 button mushrooms roughly chopped
  • 3 green olives chopped
  • 2 teaspoon crushed garlic
  • 5 tablespoon your favourite tomato pasta sauce
  • salt and pepper to season
  • pasta for one I used 2 lasagne sheets chopped into thin strips
  • ½ tablespoon olive oil
  • 1 tablespoon grated parmesan

Instructions

  • Heat the olive oil in a large frying pan and cook the garlic for one minute. Add the veges and stir them through then cook on medium, stirring occasionally for 5 minutes.
  • Add the pasta sauce and olives and stir them through. Simmer the veges and sauce for about another 15 minutes. Season to taste.
  • Meanwhile cook the pasta according to instructions.
  • Transfer the cooked pasta and ⅓ of a cup of the cooking liquid to the sauce and stir it all together.
  • Serve sprinkled with grated parmesan.
