Speedy Asian chicken parcels - dinner in 25 minutes

Speedy Asian chicken parcels

After reading last week one of the main reasons people cook the same meal week in week out (I know I keep going on about it) is lack of time, I thought I would share a few of my super quick go-to meals. Last night I got home at 7.15pm and at 7.40pm I was showered and we were feasting on a healthy, delicious dinner. I haven't posted this sort of recipe before because it's not really a recipe but it is a very easy way to prepare dinner and there's very little hands-on time involved.

Preparing the chicken for cooking

Take the baking tray out of the oven and line it with a sheet of baking paper then pre-heat the oven to 180C fan-forced. You will need a large square of aluminum foil per chicken breast. Lay the foil out and spray each square in the middle with a little bit of oil. Place a chicken breast in the middle of each square. I add some chopped shallots, a little crushed ginger and garlic and some soy sauce which makes a lovely Asian marinade. You can mix it up with whatever you like. Lemon slices are another good thing to add along with fresh and dried herbs and other sauces. If you make the square a little larger you can even throw in some chopped vegetables.

Wrap the parcels by gathering the sides so that the fillet sits length-ways in the alfoil. Fold the top over twice and then scrunch up the ends. The aim is to seal it up with lots of air inside but no holes so it can cook in the juices. Place the parcels on the lined baking tray and cook them for 20-25 minutes (a little longer if they are very big). While the chicken is cooking, prepare some accompaniments. I made some rice in the microwave and steamed some carrots.

Take the tray out of the oven and leave the cooked parcels to sit for a minute or two before very carefully opening them. Beware of the seriously hot steam that will escape when you open them.

Serve the chicken with rice and veges and top with the juices from the foil. Enjoy!

    Yum! These are so healthy too :) I love a good stir fry or chilli con when I am in a hurry......or just cant be bothered ;)

      Stir fry is another great one for dinner in a hurry. I think that will be on tomorrow's menu.
