When I watched Donna Hay make this burger on her 'Fast, fresh and simple' show the other night I knew what I was going to have for lunch 5 days later. It was just as she promised - really easy to make, quick and scrumptious.
Lay our the ingredients. The recipe says to use two chicken breasts for two people. I think one would be fine as long as you cut two flat pieces from it. I'm glad I cooked too much though - I'm just about to have the leftovers for lunch.
In a bowl, combine the olive oil, paprika and chili flakes then add the chicken to the bowl and mix it around until it's all coated in the marinade.
On the show, the chicken is cooked on the barbeque. I was feeling too lazy to fire up the barbie so I opted for my griddle pan. It's up to you. Cook the chicken for about 4 minutes each side.
While the chicken is cooking, make the lemon mayo by mixing lemon juice with the mayo.
If you like, heat your buns in the oven or on the grill. Cut them open and spread one side with the lemon mayo.
Top the buns with rocket (or mixed salad leaves).
Top the rocket with the cooked chicken fillets.
The recipe doesn't include cheese but I'm of the opinion that a burger isn't a burger without cheese (you can make up your own mind on that). Top the chicken with a slice of swiss cheese.
Put the lids on and enjoy!

Smoked chili chicken burger
Ingredients
- 1 tablespoon olive oil
- 1 teaspoon smoked sweet paprika
- 1 teaspoon dried chilli flakes I used a little less than that
- 2 x 200g chicken breast fillets trimmed and sliced lengthways
- 2 bread rolls halved (I used panini)
- rocket leaves
- ¼ cup low-fat mayonnaise
- 1 tablespoon lemon juice
- 2 slices of low-fat Jarlsberg cheese
Instructions
- Combine the oil, paprika and chilli and add the chicken.
- Toss the chicken through until it's completed coated in the marinade.
- In a pre-heated griddle pan or on the barbeque, cook the chicken for 2-4 minutes each side or until cooked through.
- Meanwhile, heat the bread rolls. Make the lemon mayo by combining the lemon juice and mayo.
- Cut the heated rolls in half and spread one half with the lemon mayo. Top with rocket leaves.
- Place the cooked chicken onto the bun and top with cheese and the lid.
