My sister bought us tickets to the Brisbane Comedy Festival for Christmas and last Thursday night was our night. I love going to shows during the week but I often face the dinner dilemma. The show was at 7.15pm. To eat before, which would be about 6pm (we normally eat between 7.30 and 8) or eat after, which would be at least 8.30? I didn't think my stomach could wait that long so 6pm it was. Luckily, earlier in the day I remember that I'd saved a recipe from the Inquiring Chef which promised to be quick and so delicious it's like the Thai equivalent of mac & cheese.
I added a bit of protein to the recipe but kept the flavours the same and it was so good I made it for myself again last night (football widow home alone). It's the perfect mid-week meal and I think it's fancy enough to serve to guests too and it's especially good because it takes 10 minutes to make.
We gobbled our yummy dinner down at 6.30 and still got to the comedy show early enough to be seated before the comedian started. You really don't want to be late to a comedy show unless you like being made fun of. We saw Tom Ballard and he was hilarious. I'd highly recommend seeing one of his shows if you have the chance.
All the ingredients are the same as the original recipe but I added and egg and some cooked chicken.
Heat the oil in the wok.
Add the garlic and shallots to the wok and cook them up, stirring, until the garlic starts to brown. It takes about 2 minutes.
Add the noodles to the wok and pour in the soy sauce then spoon in the sugar. Stir it all together.
Add the basil leaves to the wok and stir them through the noodles.
Push all the noodles to the sides and pour in the beaten egg. Let it cook for a minute and then cut it through the noodles. Be sure to scrape the bottom to get all the good bits.
Take the wok off the heat and stir in the cooked chicken.
Serve it up straight away. Enjoy!

Ingredients
- 1 tablespoon vegetable oil
- 1 clove garlic minced
- 1 small shallot thinly sliced
- 150 g 5.2oz fresh, wide rice noodles (about 1 and ½ cups)
- 1 teaspoon brown sugar substitute 1 tsp. white sugar if preferred
- 1 tablespoon soy sauce
- 20 leaves fresh basil
- 1 egg beaten
- 75 g 3 oz cooked chicken breast, shredded
Instructions
- Tip the oil into the wok and heat it over a medium-high heat.
- Add the shallots and garlic to the wok and cook them, stirring, until the garlic starts to brown.
- Add the noodles to the wok and stir them through, breaking them apart as they soften.
- Pour in the sugar and soy sauce and stir them through.
- Move the noodles to the outside of the wok and pour in the beaten egg. Let it cook for a minute and then cut it through the noodles.
- Add the basil leaves and stir them through. When the basil starts to wilt, take the wok off the heat and stir through the chicken.
- Serve straight away.

This was delicious, although I ended up adding the sugar/soy sauce nearer to the end, as the sugar caused everything to stick to the pan. Seemed more like pad thai than pad see-ew, but who's quibbling? We loved this.

I have to admit I usually wait and eat after the comedy show but that's often really late, for eating. And then just raid the fridge for leftovers. Not always the most appetising! This looks delicious, I love Pad Thai but rarely make it. The Glam Teens love it so perhaps this could be tonight's supper. GG
