He was a very wise man Confucius. If we all took heed of everything he said there would be a lot of happy, satisfied people out there. This quote is one of my very favourites and something I aim for.
Confucius has a lot of quotes and quite a few of them can be found in Fortune Cookies.
These sweet, crispy little inspiration-filled biscuits can be purchased at any supermarket but up for a challenge, I decided to try my hand at making them. Of course the best part of making them yourself is that you can tailor the fortunes to suit. If you're looking for some more quotes from Confucius you can find a selection brainy quote. They are quite tedious to make but are very satisfying and definitely something you have to do at least once.
Start by whisking the egg white in the bowl of the electric mixer until it begins to froth. You could probably do this step by hand instead but I love using my mixer whenever I can.
Pour in the icing sugar and then continue to whisk it all together until the sugar has dissolved into the egg.
Take the bowl off the stand and use a wooden spoon to mix in the sifted dry ingredients.
Pour in the melted butter and stir it into the batter until it's combined.
Lay a sheet of baking paper wrong way up and draw two 10cm circles on the sheet. I used a cookie cutter to trace mine. It conveniently had the measurement on it. It doesn't matter too much if it's a bit bigger or smaller.
Put the paper on the tray so that the circle is on the under-side of the paper and then use a small palate knife to spread just under a teaspoon of batter onto each circle. It needs to be very very thin so if it's too thick, scrape some off. Don't be tempted to work with more than two at a time. They will set before you have a chance to make the fortune cookie shape.
Bake the rounds for 6-8 minutes at 150C or until they start to turn golden.
Now comes the time for quick fingers.
Quickly flip the round over and place the fortune in the middle (mine were Christmas themed). Fold the round in half over the fortune and then pinch it back to form a fortune cookie shape.
Place them in a muffin tray so they hold their shape while they cool.
Serve your fortune cookies after a delicious meal. Enjoy!

Ingredients
- 100 g 3.5oz plain flour
- pinch of ground ginger
- pinch of salt
- 3 large egg whites
- 100 g 3.5oz icing sugar
- 1 teaspoon vanilla extract
- 75 g 2.6oz butter, melted and cooled slightly
- strips of paper with messages
Instructions
- Pre-heat the oven to 150C(302F) fan-forced and line two baking trays with baking paper.
- Use an electric mixer to whisk the egg whites until they are foamy. Add the icing sugar and continue to whisk until the sugar has dissolved into the egg.
- Sift the dry ingredients into the bowl and use a wooden spoon to stir them through.
- Pour in the melted butter and stir it through too.
- Set the bowl aside to rest for 10 minutes.
- On the reverse-side of each piece of baking paper, draw 2 10cm circles.
- Spread each circle with a very thin layer (less than 1tsp full) of batter.
- Bake the rounds for 6-8 minutes or until they turn golden.
- Working VERY quickly, flip the circle over, place the paper strip in the middle, fold the biscuit in half and then pinch the two points together backwards.
- Set them in a muffin tin to hold their shape while they cool.
- Repeat with the rest of the batter.
- Fortune cookies will keep for up to 3 days in an airtight container.

What a great idea. I had no idea you could make your own fortune cookies. And yours have turned out so well. They look perfect. And I love how you've packaged them. I know I've had some fortune cookies with great 'fortunes' but I can't think what they were. Must be time to get back to a Chinese restaurant.
