‘What would you like to see here?’

That’s the question I posed on the Facebook page a couple of weeks ago.

There were lots of requests like quick, healthy dinners and easy snacks but another popular ask was for lunch box snacks.

You know I’m big on making my own snacks so this one was popular with me too and I will try to share a ‘lunchbox snack’ every few weeks.

Now don’t think that lunchbox snacks are just for kids.

They will all be kid-friendly but just as good for us big kids.

Sorry I don’t have more photos of these apricot and coconut logs but I made them for bubba's party and completely forgot to take photos the day before.

Anyway, they were a hit with the kids and adults and although not all that visually appealing (you could coat them in coconut), they’re super tasty and pretty good for you too. Enjoy!

Apricot and coconut logs

Delicious and easy apricot coconut logs made with just a few ingredients—a naturally sweet treat perfect for lunchboxes or snacks.

Ingredients

  • 300 g 11oz dried apricots
  • 100 g 3.5oz dried pitted dates
  • 1 teaspoon coconut oil
  • 100 g 3.5oz desiccated coconut

Instructions

  • Place all the ingredients in the
    Thermomix bowl (or
    food processor bowl) and chop 20 seconds, speed 7 (or just until chopped and combined).
  • Scrape the sides and mix (process) another 15 seconds, speed 10.
  • Using 1 heaped teaspoon of mixture at a time, roll it into logs and place in a container with baking paper between layers.
  • Refrigerate until serving.
