- 300 g 11oz dried apricots
- 100 g 3.5oz dried pitted dates
- 1 teaspoon coconut oil
- 100 g 3.5oz desiccated coconut
Place all the ingredients in the Thermomix bowl (or food processor bowl) and chop 20 seconds, speed 7 (or just until chopped and combined). Scrape the sides and mix (process) another 15 seconds, speed 10.
Using 1 heaped teaspoon of mixture at a time, roll it into logs and place in a container with baking paper between layers.
Refrigerate until serving.
