I’ve gotten a bit lazy in my recipe creation recently. I guess I could flip that and say I’ve gotten more effective. I wasn’t the one who discovered carrot cake bliss balls.

Instead of going out and looking for recipes, I’ve been letting other people do the work.

I wait for someone else to make something I’ve never made before and if I like it, then I’ll have a go myself. If it still gets a big tick then you get it here.

It’s really quite efficient isn’t it? I’m all about simplifying so if I can simplify how I get my recipe inspiration then why not?

Mother’s group is a brilliant source of recipe inspiration. My Mother’s group friends are pretty awesome cooks and they’re always turning up with new deliciousness where I can sometimes get a bit stuck in my gluten-free banana bread rut.

Carrot cake bliss balls are just that - little carrot cake-like balls of bliss. They honestly taste just like carrot cake.

I had one…. Then another…. Then another. Then I had to move the bowl out of reach to stop myself eating the whole lot.

They’re nut-free (pretty much everything-free) so lunchbox-friendly although I think next time I make them I’ll throw in some walnuts just to make them truly authentic.

Carrot cake bliss balls

Ingredients

  • ¾ cup dried pitted dates
  • ½ cup raisins (I used sultanas
  • 1 ¾ cups desiccated coconut
  • 1 large carrot peeled and roughly chopped
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • Extra coconut for rolling

Instructions

  • Place the dates in a heatproof bowl and cover with boiling water then leave to sit for 10 minutes.
  • Drain the dates and place them in a food processor with the rest of the ingredients and blitz until the mixture comes together.
  • Use a walnut-sized amount of mixture at a time and roll into balls then coat in coconut.
  • Refrigerate until serving.
