Choc peanut butter quinoa balls are a delicious healthy snack. So tasty you'll think you're eating something naughty.

Not that I need to make excuses, I like to think that I can be random in my posts and that includes photos, but the real reason for the Instagram-like pics is that I just couldn't make these babies look pretty.

There's no way around it... they look like you know what.

Good one Claire, way to convince people to make them then actually eat them.

While choc peanut butter quinoa balls might look pretty awful, I think they're quite delicious and a nice healthy snack that seems like something a bit naughty.

Now if you've been visiting a while you'll know that I haven't had the best relationship with quinoa. I loved it when I ate it in South America but I've never successfully cooked it at home.

You wouldn't know it though. When I started on cleaning out the pantry a month ago (I'm yet to finish), I found 3 bags of the stuff.

At the Good Food and Wine Show a couple of weeks ago, Maureen introduced me to the girls from Andes Mills who grow their own quinoa in Peru and import it to sell here in Brisbane.

This is actually their recipe and now that I've had one successful quinoa experiment, I may just get through those three bags and buy some more from them.

It wasn't all smooth sailing. After rolling two balls and having most of it stick to my hands, I realised the mixture probably needed to be chilled for a while first.

After half and hour in the fridge it rolled perfectly although the finished result is a soft, not firm snack ball.

I nibbled on them at our antenatal class over the weekend while Will laughed at my lunch box full of snacks.

Let's just say in a room full of pregnant woman, I was not the only one with a snack pack. Enjoy!

Ingredients

  • ¼ cup quinoa
  • 1 tablespoon peanut butter
  • 2 tablespoon honey
  • 1 tablespoon cocoa powder
  • ¼ cup of quick oats

Instructions

  • Rinse the quinoa then place in a pot with ½ a cup of water and bring to the boil.
  • Turn the heat to low and let it simmer for 10 minutes or until the water has evaporated and the quinoa is soft.
  • Remove it from the heat into a bowl and refrigerate until cool.
  • Take it out of the fridge and mix in the rest of the ingredients. If it's a little wet you may need to add a some extra oats.
  • Refrigerate until the mixture is cool.
  • Roll the mixture into balls and refrigerate until you want to eat them.

    I just made these this morning and my fussy 2 year old devoured 3 within moments. More mummy more!!!
    I swapped the cocoa for cacao powder so id feel less guilty :)
    Going to make another batch now.

    I've made things like this and then wondered how I'm going to style them to make them look more attractive! I think you did a really good job. And I know these would be really yummy - and so few ingredients! Wonderful xx
