I go through phases with dessert. I can go for weeks without having it at all then one night I'll feel like a little something sweet and weeks will pass where I can't finish dinner without having dessert.

When I'm being healthy it's usually some fruit or yoghurt but when I have a lack of restraint the over-supply of baking is usually attacked.

Frango ice cream

A couple of years ago I started experimenting with making ice-cream and sorbets in the VitaMix blender. The best combination I came up with was simply frozen raspberries, frozen mango and yoghurt blended together.

The husband was the one that came up with the Frango name. It was meant to be a combo of frozen raspberry and mango but somehow the poor raspberries got left out.  It may seem like something boringly-simple but something magical happens in that blender.

Frango ice cream

The texture is so smooth it could pass for gelato in an up-market gelateria and the sweetness of the mango and tartness of the raspberries works so deliciously well together. Even if you don't like yoghurt you'll like this. It really just makes it nice and creamy.

Mango has just started appearing in the shops here (yay!) but you can also buy it frozen at the supermarket.

Dairy free version

This is the perfect summer dessert if you want something healthy that tastes seriously naughty. It could easily be made vegan or dairy free by using coconut yoghurt instead of Greek yoghurt.

I'm not sure if you could freeze it and re-scoop later but it should work. I like it fresh from the blender when it has the smooth, soft texture of gelato. I'm sure it would turn out just as well in a food processor too.

Go on. Make it. You can thank me later. Enjoy!

I can't believe Mangoes are already on the shelves!! It's a bit like Christmas decorations, they seam to appear earlier and earlier every year.
I'll have to stick to the frozen variety of mango for the time being, we're yet to get the fresh ones in Sydney but I'll be making this for sure, looks fab!

I am so excited because I have a vita mix and that is really the only thing that will make this beautiful concoction perfect.
