There are only so many series of D-grade celebrities going head-to-head, people starving themselves on deserted islands, racing around the world, dancing their feet off and belting out songs that I can take. I think I have finally reached my reality TV threshold. Big Brother had the idea. They saw that their time was up and they called it quits. I have to say I wish a lot of the other shows would do the same.
I really miss good old shows like Friends and Sex and the City. Why don't they work on bringing out some shows like that rather than re-hashing the same thing over and over?
The one type of reality show I can still stand is the food-related variety (shock!). What I would like to see though is a show where they make things that everyday people can actually re-create - easy, quick and healthy (ok mostly healthy) recipes that you can whip up on a 'school night' with the odd fancy recipe thrown it. They should show things that look fancy but really there's not much to them.
These little white chocolate and raspberry no-bake cheesecakes would definitely be featured on my cooking show. They're so quick and easy to make and look and taste fabulous. They're definitely one for the sweet tooth though, they are super sweet.
Ok so these wouldn't win the Heart Foundation tick of approval but they sure win the taste test and tick the super easy box.
They take about 5 minutes to make and you don't need any fancy equipment.
The first step is to melt the chocolate. You can do this the double boiler way but I melted my chocolate in the microwave. Place the white chocolate, butter and vanilla in a heat-proof bowl and microwave it for 20 seconds at a time, stirring between, until it is totally melted. Set it aside to cool slightly.
In a large bowl, mix the cream, cream cheese and sugar together until it's nice and smooth.
It looks so delicious even at this stage it was hard not to jump right in with a spoon.
Pour the melted chocolate into the cream bowl and mix the two together. Now it becomes even more irresistible.
If you prefer, you can use fresh or frozen raspberries to add the pink sweetness but they were a little out of my budget at the time so I went with raspberry jam. Spoon blobs of it onto the mixture and then swirl it through with a spatula or knife.
Spoon the mixture into the ramekins and smooth out the tops. They will need to be refrigerated for at least 8 hours to set properly. I left mine in over night. My lovely mum spotted these mini ramekins on sale at Target a few weeks ago and bought me a whole heap of them along with some other fancy shapes too. Thanks mum!
Of course this recipe can be divided down if you don't need quite so many servings. Don't make the serves any bigger though. It just might be sweetness overload.
To add a little bit something extra to the cheesecakes, I stuck a wafer in each one to serve them. You could do anything you like to add crunch though. I think a crumble topping would be nice or your favourite plain sweet biscuit. Or you could leave them plain and top each one with a fresh raspberry. Enjoy!

Mini white chocolate and raspberry no-bake cheesecakes

- 500 g 18oz white chocolate, broken into pieces
- 50 g 1.8oz butter
- 1 teaspoon vanilla essence
- 500 g 18oz full fat cream cheese
- 50 g 1.8oz white sugar
- 175 ml 6oz whipping cream
- 5 tablespoon raspberry jam
- something crunchy to top them - I used wafer biscuits
Instructions
- Put the chocolate, butter and vanilla essence in a heat-proof bowl.
- Melt it all together in the microwave in 20 second bursts, stirring between each microwaving. It will take about 1 minute all up but be very careful not to burn the chocolate. Once melted, set it aside to cool.
- In a large bowl, use a wooden spoon to stir together the cream cheese, sugar and cream until the mixture is smooth.
- Add the melted chocolate and stir it through until the mixture is even.
- Spoon blobs of jam into the mixture and cut it through with a spatula. Be careful not to over mix it. You want it to have a marbled effect.
- Spoon the mixture into the ramekins and smooth out the top.
- Refrigerate them for at least 8 hours.

Oh dear - those look very dangerous. Just look at that list of ingredients! And the problem is I think it would be so hard to stop at one! And your wedding dress! How many could you eat before needing to get it let out a little! You must have excellent self-restraint. But they do have fresh raspberries and they are good for you!
