Kid friendly banana cake with chocolate icing - refined-sugar free, delicious and simple to make.

My baby boy's first Birthday cake - it was a bit of a challenge I will admit.
He used to love bananas so they had to be in there.
I didn’t want him to have sugar so that couldn’t be there.
I was going to go all out and try one of those whacky egg-free, dairy-free recipes as well but then the thought of it failing stopped me (read - I was way too lazy to make another cake if it failed).

Instead of regular sugar I used coconut sure and while a lot of times I have found it a bit bitter, this was just right.
Bananas help with the sweetness and are my go-to for reducing the sugar when I convert a recipe.
The cake was super simple and I dressed it up with my monkey jungle cake toppers and served it on a piece of plastic grass I got from the $2.30 shop.

The other older kids went straight for the best ever chocolate mud cake but Mr One and I enjoyed his cake for morning tea for the next couple of days and one of the best critics, my grandmother Guppy, thought it was delicious.

Kid friendly banana cake with chocolate icing
Ingredients
Cake
- 3 ripe bananas peeled
- 10-15 dates
- 80 g 3oz caster (superfine) sugar
- 240 g 8.5oz Wholemeal Self Raising Flour
- 150 g 5.3oz butter, room temperature
- 2 free-range eggs
- 1 heaped teaspoon cinnamon powder
- ½ teaspoon bicarbonate of soda
- 40 g 1.5oz milk
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
Icing
- 1 ripe avocado
- 1 ripe banana
- ½ cup raw cacao powder
- Pure maple syrup to taste
Instructions
- Preheat the oven to 160C(320F) fan-forced and grease and line a round 20cm cake tin.
- Place the bananas, dates and vanilla essence in the bowl of the Thermomix (or in a food processor) and mix for 5 seconds on speed 4 (or until smooth). Set aside.
- Add the butter and caster sugar and mix for 20 seconds on speed 5 (or in a food processor until smooth).
- Add the eggs one at a time and combine each for a few seconds on speed 5 (or until combined).
- Add the banana mixture and cinnamon, and mix for 3 seconds on speed 5.
- Add the flour, bicarbonate of soda, baking powder, and milk and mix for 15 seconds on speed 4 to 5.
- Pour into a lined 20cm cake tin and bake in the oven for 1 hour.
- To make the icing, place all the ingredients in the bowl of a Thermomix or food processor and process until smooth. Taste and add a little extra maple syrup if required.
