Amy's overnight apple and cinnamon oats

I'm a little bit cranky this morning. Will's been trying to convince me to put a no-junk-mail sticker on our letterbox for weeks but my response is always 'how will I know about the good deals?'

He even tried to use the environmental argument with me - imagine how many trees go into making all this paper - which would usually win me over but the thought of missing out on a bargain was just a little more upsetting to me.

I want!

I've been on the hunt for one of these for months now but the least expensive one I've found so far is $130 which is a fair bit more than I'm prepared to pay for a little stool to sit by the couch and replace the $7 Ikea plastic one that's there now.

Imagine my excitement when I was flipping through today's junk mail after my walk and saw them in the Reject Shop catalogue for $40! They were on sale from today so as you can expect I was there waiting at 8.30am when the doors opened.

I still had my walking gear on so I practically sprinted around the shop but black was the only colour I could find. I grabbed the nearest staff member and before I could even get the full sentence out of my mouth she told me they'd sold out of all but the two black ones..... yesterday!

Yesterday! When they were advertised to go on sale today. Naughty naughty Reject Shop! I got back in my car, lower lip turned down like a small child who's been told no to something they really wanted. Yes I could have driven around to other stores but considering how fast they sold out I didn't like my chances.

Instead I went home and wrote them a rather cranky but polite email which will probably get me nowhere but it sure made me feel better (yes I'm one of those people).

EDIT: at 12.30 I received an email from customer service. They have found me a stool and are having in transferred to my local store for me. I'm so impressed I nearly fell off my chair. How's that for customer service?! Well done Reject Shop!

Maybe Will is right, getting the junk mail only leads to disappointment. At least I'd already made my breakfast the day before so I could cheer myself up with yummy oats when I got home from my unsuccessful shopping trip.

The first time I tried this, it was made for me by my friend Amy and I just had to have the recipe. It's like a summer version of warm winter oats and you can change up the fruit and nuts with whatever you like. Amy adds dried cranberries to hers but I had lots of raspberries in the freezer so in they went.

If you have to have breakfast on the run this is the recipe for you. Make some up the night before then before you head out the door, spoon in some yoghurt and you're good to go. I've made it up to three days in advance so you could make half a week's worth of breakfast in about five minutes. Did I mention it's also low in calories? As Amy said.. nom nom nom!

The ingredients

I'm missing the cinnamon from the ingredient pic but you can see it's just all-natural goodness.

Layer one

You can just throw everything in a bowl together but I wanted to make them look pretty. They'd be a nice brunch item if you layered them in wine glasses.

Start with ⅓ of the oats.

Apple layer

Then top it with half the apple.

Raspberries

Sprinkle in some raspberries and crumbled walnuts.

Repeat

Add another ⅓ of the oats.

The finishing touch

Repeat with the apple, raspberries and walnuts and then top each one off with a sprinkle of cinnamon.

Water

Pour in just enough water to cover the oats then cover up each serve and pop them in the fridge overnight.

If there's still a bit of water on top you can carefully tip it out (it's better to have too much rather than not enough and risk having dry oats).

Top each one with two tablespoons of your favourite yoghurt and mix it in.

After stirring in the yoghurt they don't look all that pretty but let me assure you, they are delicious. Enjoy!

Amy's overnight apple cinnamon oats

Ingredients

  • 1 cup oats
  • 1 apple grated
  • ½ teaspoon cinnamon
  • 1 tablespoon crumbled walnuts
  • 50 g raspberries
  • water
  • yoghurt to serve

Instructions

  • Divide ⅓ of the oats between two jars.
  • Cover with ½ the apple, ½ the raspberries and half the nuts.
  • Repeat with ⅓ of the oats and the remaining apple, raspberries and nuts.
  • Sprinkle the top with cinnamon.
  • Pour just enough water over the top to cover the oats.
  • Refigerate overnight.
  • To serve, stir two tablespoons of yoghurt through each serving.

    Ooh yum! I love overnight oats. I just usually use a bit of yoghurt and whatever juice I have lying around. So handy for the weekend :) Stops me from eating bacon and eggs too ;) haha.
    Im with you on the junk mail. People get a no junk mail sign - I want on that says "I thrive on junk mail" lol

    I don't block junk mail either. Sometimes you just need something to wrap the fish bits in. We're still a fairly small area so Aldi sale days while hectic, they're rarely sold out. I like those stools! I'm glad you got one.

    I love waking up knowing that breakfast is ready.

    That looks like a really good breakfast. What a great recipe and I so love your jars, Claire. I don't have a sign on my letterbox because I'm terrified of missing out so I welcome everything that comes in the mail. But that was a terrible experience you had and I'm relieved they've made amends. The same thing happened to me with Aldi (repeatedly). They always advertise these incredible specials and you beetle down there only to discover they sold out the day before - the day before you even found out about the sale. I've stopped going to Aldi xx

      Ok I'm glad I'm not the only one. I've only headed in for Aldi sale day once and it was madness! I go on non-sale days now.

    I've been wanting a stool like that too - I saw one at World Market awhile back for $40 and couldn't decide. When I went back it was gone! :( And I just tried overnight oatmeal a couple of weeks ago - so amazing!
