My sugar brain seems to have developed into a functioning brain in the last 24 hours. Actually it's probably Christmas excitement now there are just two sleeps until the big day, but after yesterday's blonde moment I remembered I can do one better than playing you my favourite song, I can show the film clip. It's hilariously bad (it was the early 90s remember) but well worth a watch.
This morning when I was on my way back from driving the man to work (a Christmas treat) they played it on the radio and I cranked it up and sang and danced as I drove. It was a bit sad to hear that it was voted the most hated Christmas song played in shopping centers. It's not enough to put me off though.
This photo (combined with about the last week's worth of posts) might explain my permanent sugar high but I could not resist a recipe that combined chocolate and cinnamon. Anything with cinnamon has my attention. Choc-cinnamon fudge can be whipped up in about 10 minutes and be chilling in the fridge waiting for Christmas. It's a freezer-friendly recipe too so can be made ages in advance.
You only need 4 ingredients to make it.
I took the super lazy route and threw everything in the heat-proof jug and microwaved it 30 seconds at a time, stirring in between, until it was smooth. If you're not quite as lazy as me and would like it to be extra smooth (I quite liked the little choc-chunk surprises), mix all the ingredients together in a heat-proof bowl and place them over a pot of boiling water but don't let the bowl touch the water. Stir it all together over the heat until the chocolate has melted and it's nice and smooth then spread it into a greased and lined tin.
Chill the fudge in the fridge for at least 2 hours to set it.
Run a knife around the ends of the tin and then use the baking paper to lift the slab of fudge out of the tin.
Chop it up into little squares and serve straight away or refrigerate it until needed. Enjoy!

Recipe

Ingredients
- 1 can sweetened condensed milk
- 2 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 500 g 18oz chocolate chips or chopped up chocolate
- 90 g 3oz butter, cut into cubes at room temperature plus extra for greasing the tin
Instructions
- Butter the base and sides of a 15cm square tin and line the base with baking paper so it extends over the sides of the tin.
- The original method and my method differ slightly. I threw all the ingredients in a microwave-proof jug and zapped it in 30 second blasts in the microwave, stirring between each one until the mixture was smooth.
- Alternatively, place everything in a heat-proof bowl and melt it all together over a pot of boiling water.
- Spread the mixture into the tin and put it in the fridge for at least two hours to set.
- Run a knife around the ends of the fudge then use the over-hanging baking paper to lift the fudge out of the tin.
- Cut it up and serve cold or refrigerate until needed.
- Can be frozen.
