Spinach and feta pastry wands - supporting Starlight Children's Foundation

Spinach and feta pastry pops

My mum and dad do a lot of good work for the Starlight Children's Foundation. If you haven't heard of them, they grant wishes for seriously ill children. It's a wonderful cause. I've been with mum when she's granted a few wishes and seeing their little faces light up is just priceless. In order to be able to grant wishes, the foundation does a lot of fundraising and last Sunday afternoon mum organised a little get-together. They sell merchandise ranging from pens to stress balls (all star-shaped of course) but my favourite and by far the most popular item is the magic wand. It's power is so special, that should you purchase one, it will make a sick little boy or girl very happy. I made up a few new recipes for the night and inspired by the magic wands, made spinach and feta pastry wands. They were mighty tasty and who doesn't like eating food from a stick?

The ingredients

There are only 4 ingredients (and a little milk for brushing) in these tasty treats. Make the filling by mixing the feta, spinach and nutmeg together in a bowl.

Cutting the pastry

Cut out 5.5cm (or thereabouts) rounds of pastry. I used the pretty edge but you could just use a plain round cutter.

Filling

Working with 8 at a time, place a teaspoon-full of mixture in the middle of each pastry round.

Sticks

Press the stick into the middle (I pre-soaked the sticks in water to make sure they didn't burn in the oven) of each one.

Covering

Place a second round of pastry on top of the stick and filling and gently press the edges together. Prick a hole in the top of each one so they don't explode in the oven. Ok they won't explode but they won't look too pretty.

Milk coating

Lay them out on a baking paper lined tray and brush each one with a little bit of milk. Bake the pops for 15 minutes or until they are golden at 180C fan-forced.

Let them cool down for a minute or two on the tray then serve them up. You can see I didn't press the sides together well enough on some of mine.

I saw a shop display some little knickknacks this way a few weeks ago and though it was great. All you have to do is fill a bowl with rice and stick the wands in it. Enjoy!

Spinach and feta pastry wands - supporting Starlight Children's Foundation

Servings: 16 wands

Ingredients

  • 2 sheets puff pastry
  • 100 g 3.5oz feta
  • ½ teaspoon nutmeg
  • 150 g 5oz frozen spinach
  • 16 paddle pop sticks

Instructions

  • Pre-heat the oven to 180C(356F) fan-forced. Line a baking tray with baking paper.
  • Place the paddlepop sticks in a bowl and cover them with water.
  • Let the spinach defrost, drain the liquid from it then mix together the spinach, feta and nutmeg.
  • Cut 32 5.5cm diameter rounds from the puff pastry and lay 16 of them out flat.
  • Spoon a blob of the spinach and feta mixture in the middle of each round.
  • Dry the sticks and press one into the middle of each round.
  • Place another round of pastry on top of the filling and press the edges together.
  • Brush the top of each one with milk.
  • Bake the pops for 15 minutes or until they are golden.
  • Let them cool slightly then serve.

    Such a beautiful post :) I love that your mum calls you bub - my parents do the same. Almost 30 and I'm still bub lol. And its true, food on a stick is awesome!!!

      They would be great on a buffet actually. It's always nice to have some things that aren't flat on the table.

      It is a great cause! I first got the idea from some sweet pie-pops I saw and thought savoury would be an interesting twist.
