This is a bit of an embarrassing post to write. It happens to me sometimes and every time, until now, I have recovered from it. That’s not a bad record for 4.5 years of blogging but today, well today, I can’t for the life of me remember where this recipe came from.
I have spent a good portion of the morning flicking through all the latest magazines I’ve been getting recipes from. I’ve searched my inbox, Pinterest, my iPhoto (sometimes I take photos of recipes) and all I have found is that I need a better system for keeping track of recipes.
It’s a bit sad because this salad was pretty tasty. I do remember that at least. It had tiny pieces of roasted beetroot, hence the ‘pink.’ I mixed the beetroot in while the quinoa was still warm to give it the flush. It had crunchy roasted walnuts and fresh baby spinach and a sprinkling of feta gave it a nice saltiness.
For me it was the perfect salad and I am very sorry I can’t share the recipe with you. If you wanted to attempt it, I would cook up some beetroot and quinoa, mix them together with a bit of olive oil and lemon juice and toss it with baby spinach, roasted walnuts and feta.
There was also some very finely chopped carrots and capsicum thrown in from the garden
You know what, maybe I can’t find the recipe because I made it up. I have an inkling that might be the case. Well there you go, a Claire K Creations original ‘recipe’ for you. Enjoy (if you can figure out how to make it)!

I wondered where you got pink quinoa when I read the title of the post. I want this with candied walnuts and feta. Note to self, write it down.

What a lovely recipe! I know exactly what you mean when you can't remember your inspiration for a recipe. The beetroot flush pairs perfectly well to create that gorgeous hue. Well done Claire :)

That happens to me all the time. Usually it's not the recipe itself but where the inspiration came from! I need a folder in my brain for things like that!
