Super simple stylish side salad

Please forgive me for my lack of posting yesterday. I was off at the doc being told I yet again have tonsillitis. Thankfully I was onto the antibiotics early and feeling slightly better today so heading in the right direction.

I do have a very easy and pretty recipe to make up for my brief absence. This recipe is a nice alternative to a big salad in a bowl. It's the super simple stylish side salad - how's that for alliteration?!

Two ingredients

There are just two ingredients - prosciutto and baby cos lettuce. You can buy the lettuce from the supermarket fresh food section and they come in packs of two.

A work in progress

Peel the outer leaves off the lettuce. Look at the bottom of them to find the middle and then cut in half then into thirds so you end up with 6 wedges of lettuce.

Trim the fat off the Prosciutto (you don't have to but I think it's a bit gross left on unless you're cooking it).

Wrapped up tight

Now here's the tip from mum - Prosciutto has a hard and a soft end. Starting with the hard end, wrap the slices around the lettuce wedges.

Ingredients

  • 2 packets of Prosciutto
  • 2 baby cos lettuce

Instructions

  • Trim the fat off the Proscuitto. Tear off the outer layers of lettuce then cut each into 6 wedges.
  • Working from the hard end, wrap one slice of Prosciutto around each lettuce wedge.

    I hope you're feeling better Claire! Tonsilitis is no fun for eating is it! Now this is a great side salad. I love eating low carb and I would totally go for this! :D

      Thanks Lorraine. It isn't fun at all! Although it does make you think if something really is worth eating through the pain.
