Today I have a very special visitor and guest sharing one of her favourite new recipes with you... my sister. My sister and I are pretty different when it comes to food. She's very very healthy and likes all sorts of good things like tofu and beans, every fruit under the sun and she's even friends with quinoa (he doesn't really like me) so today she's sharing a deliciously healthy muffin - Paleo apple cinnamon muffins.
Before I introduce her I'll just share a little text message conversation we had last week:
Claire: I just tried your recipe but with apples. It's delicious!!! Don't be offended but I'm going to do a couple of photos myself.
Anna: Haha no it's ok. I only used my phone. I'm just glad you liked it! :-)
You see apparently I can be a bit of a control freak. Good thing my sister doesn't mind. I promise I wasn't making it to check up on her I just wanted to see if it was really that good because I've tried those microwave mud cakes with disastrous, rubbery results. I can assure you, you will not feel like you're nibbling on the end of an eraser-topped pencil. The texture is just like an oven-baked muffin. Over to you sis:
Hi I'm Anna K, Claire's little sister. Having always been a pretty healthy eater (unlike my sister sometimes!) the problem I find with some health foods is that I don’t feel full afterwards.
When my man suggested we try out the paleo diet I thought ‘why not.’ I love it and I’m already feeling great from cutting down on refined sugars and carbs (don’t let that put you off Claire’s cakes though).
The only problem is that sometimes it makes grabbing a quick snack when you’re in a hurry quite a challenge. I’ve been searching and experimenting for a few weeks now and finally perfected this delicious 2 minute mug muffin.
The best thing about this recipe is that it's very forgiving and variations are really easy to do. You can use different fruits (I used peaches the first time but Claire changed it to apples) or berries, use coconut flour, add spices or even sprinkle over some crushed nuts.
It’s so easy, filling, packed with the good stuff and delicious – the perfect way to break the fast. Plus they're gluten-free, dairy-free and vegetarian so great for any allergy sufferers.

Recipe
Ingredients
- 2 tbs almond meal
- 1 tbs LSA mix or another tbs of almond/hazelnut/pecan meal if you would prefer
- ½ tbs Apple Sauce
- 1 tbs Peach butter
- ½ teaspoon baking powder
- ½ teaspoon of vanilla
- 1 tbs of honey
- 1 egg
- ½ teaspoon cinnamon
- 1 apple skin on, diced (½ in mug and ½ decoration)
Instructions
- Put it all together in a bowl (save ½ the apple for decorating)
- Mix it up.
- Pour into a big mug (or two).
- Put it in the microwave (one at a time if you're making two) for 2 to 2.5 minutes on high until it looks completely cooked and TADAH!

My grab and go snack is usually an apple or ryvita with spicy pesto and a slice of cheese. Perfect for out the door in the minute moments.
The apple muffins look good.
