Irish brick cake

Let me set the scene for you. It was Saturday night about 6.30pm. I was in my PJs (because I'm so cool) on the couch and thought I'd do a little blog reading. Dinner was already sorted in my head - just had to pop the chicken in the oven and chop up the veges. The first post I read was from Maureen aka The Orgasmic Chef.

She was sharing a recipe that promised to be irresistible. It was easy, quick and the perfect dessert. I did a mental inventory check of the kitchen and realised I had all the ingredients and even some Barambah cream to serve with it. It seemed easy enough that I could whip up the batter while the chicken cooked and it would bake away while we ate our dinner.

About 15 minutes later I yelled across the room to Will 'you really need to supervise me better.' His response 'what are you eating now?'

He's not mean, he has good reason. I have this weakness when it comes to icing and if I don't have someone to supervise me when I'm icing a cake, more may end up in my mouth than on the actual cake. No on this occasion, despite there being three tupperware containers of biscuits, meringues and cupcakes in front of me I couldn't resist whipping up this cake and I'm so glad I did.

Irish brick cake is sort of like a cross between apple pie and apple crumble where the crumble is the crust. It's nice and crunchy and because it has oats and apples and honey instead of sugar, it's almost healthy. Isn't it?

Irish brick cakeI basically used the recipe Maureen posted so I won't re-create the wheel by sharing it you can pop over and visit her if you'd like to try it too. I used pie apples (fresh is better) and honey instead of the sugar and golden syrup and also added a little cinnamon to the mix.

Serve it warm with cream if you want a really good great or it's just as good sliced up at room temperature. Enjoy!

    Ooh, I missed this one on Maureen's blog, but it looks sensational. Will, you need to supervise Claire better, but not so she won't bake so much, but so you don't miss out on all these treats! :)

      Haha I don't have much competition in eating it Celia. He's not a big sweet tooth. Lucky me!

    I came across this recipe on Sunday night, and made it the next day!
    I'ts sooooooo yummy. An absolute winner!!!! My partner looked at it and laughed "Now that is a brick." But changed his mind when he tried it, YUMMO!

    I saw this om Maureen's blog and thought it looked really delicious. When I lived very near my best friend I used to put on my PJs and pop,over to her house to watch a Saturday night movie. It was just so comfortable - perfect for chilling. GG

    This cake is a very tempting, simple apple cake perfect for fall! Why does it look a little different (I like it!) from Maureen's post...did you use a smaller pan which made it a little taller?

      Possibly Bonnie. I probably used a little too much filling too which might have made it taller.

    I so wanted to make that cake after seeing it on Maureen's blog! It looks so scrumptious. Whenever I get to go to bed early it feels a bit naughty! :P

    I saw this on Maureen's blog and pinned it. I think it sounds like a really comforting winter night's dessert and just perfect for enjoying while wearing your PJs. I'm guilty of getting into my PJs quite early in the winter months - they're so cosy! xx

    I've never heard of this, but it looks great! I love those spur-of-the-moment baking experiments, especially when they turn out so well! PJs at 6:30 on a Saturday - I know it well. And love it!
