Easy Passionfruit Yoghurt Cake (moist & delicious)

A simple and deliciously moist passionfruit yoghurt cake recipe perfect for morning tea or freezing for snacks and lunchboxes.

I have an admission. 

I am a little embarrassed to say that I watched Desperate Housewives all the way to the end of the series and I loved it. 

I can’t be the only one or it wouldn’t have lasted as long as it did. 

One thing I love about it is guessing who people in my life would be if they were on the show. 

I think that I would be closest to Bree but with a hint of Lynette. 

Bree would be the most likely to fly with a freshly-baked passion fruit cake to visit a friend. 

I’m definitely not as prim and proper and well dressed at all times as Bree (that’s the hint of Lynette) but I do love homemade goodies and throwing dinner parties. 

Passionfruit yoghurt cake

It was a little tricky to transport but last weekend when I visited my friend Kristin in Sydney I arrived with cake in hand. 

It got a little bit beaten up in the overhead locker (they're not lying when they say items move around) but it survived. 

I knew I wanted to use some of the fresh passionfruit that I got from a friend's passion fruit tree the week before and thought they’d go quite nicely with yoghurt. 

A quick Google search came up with a Donna Hay lemon zest cake. 

It was perfect. 

I adjusted the sugar a little bit so it wasn’t too sweet and replaced the icing with my own creation and the passionfruit yoghurt cake was born. 

It was very tasty and the perfect afternoon tea enjoyed with a cup of tea while Kristin and I had a girlie catch up session on Saturday afternoon.

Why this recipe?

  1. ​It's delicious! 
  2. It's really simple to make & not much cleaning up involved. 
  3. If you love passionfruit you will really enjoy the passionfruit flavour. 
  4. It has a lovely moist crumb thanks to the yoghurt. 

Ingredients

Cake

  • Oil - I used olive oil but you could also use coconut oil
  • Eggs - at room temperature 
  • Passionfruit pulp - use fresh passionfruit or tinned passionfruit syrup/passion fruit puree
  • Plain yogurt - I used Greek yogurt
  • Caster sugar - aka superfine sugar
  • Self-raising flour - or spelt flour. Here's how to make your own self-raising flour. Or use cake flour with baking powder added.  

Icing

  • Passionfruit pulp - again use fresh or tinned passionfruit
  • Icing sugar - also called confectioner's sugar. Here's how to make your own icing sugar.

​Substitutions

If you didn't want to use yoghurt you could use cream with a bit of lemon juice added or the coconut cream also with lemon juice added. 

Yoghurt, oil, sugar, eggs and passionfruit

Instructions

This yogurt cake with passionfruit glaze is seriously easy to make. 

I managed to whip it up in the morning and it was ready before we had to leave for our flight at midday. 

There are just two steps: 

Step one: throw the eggs, passionfruit, yoghurt, sugar and oil (aka all the wet ingredients) in a large mixing bowl and whisk them all together.

Really there's a step before this one that's to preheat the oven and grease and flour your cake pan. 

I used a ring tin for this but a bundt tin would be perfect too. 

​Or use a large loaf tin. The type you'd use for banana bread. 

The dry ingredients

Step two: sift the flour into the bowl and stir it through.

Cake batter

See, I told you it was seriously simple.

Ready for baking

Spread the batter into the prepared pan. 

Bake the cake at 180C fan-forced for 35 minutes or until a cake tester comes out clean.

You could also make this in a loaf tin to make passionfruit yoghurt loaf (it would need to be a big loaf tin). 

Resting

Leave the baked cake to rest in the tin for 5 minutes.

Such a perfect bottom

Turn the cake out onto a wire cooling rack. 

I had to pause and take a photo of the cake while it was upside down. 

The inside was just so smooth and perfect.

Just chilling

Leave the cake to cool on the tray for about half an hour. 

There are my compulsory little versions chilling next to the big mamma. 

I always put a little bit of cake batter in a cupcake tin so I can taste it before serving to others. 

Just in case my brain has gone a little crazy and I've done something crazy like mix up the sugar and sea salt! 

This recipe works well for cupcakes too.

How to make the passion fruit drizzle

Make the icing by mixing the icing sugar into the passionfruit. 

If you don't want to have passion fruit seeds you can strain the pulp with a fine mesh sieve and just use the fresh passionfruit juice. 

You may need another passionfruit or two to get the right consistency. 

Drizzle it over the top of the cake while it’s still a little warm.

Serve the cake warm if you can but otherwise at room temperature it's just as delicious. 

A little bit of whipped cream on the side wouldn’t hurt either. 

Store the cake in an airtight container.

Ingredients

Cake

  • ¾ cup 180ml vegetable oil - I used olive oil
  • 2 eggs
  • ¼ cup passionfruit pulp
  • 1 cup thick natural yoghurt - I used Greek yoghurt
  • 1 cup caster superfine sugar
  • 2 cups 300g self-raising flour

Icing

  • ¼ cup passionfruit pulp
  • approximately 3 tablespoon icing sugar

Instructions

  • Pre-heat the oven to 180C fan-forced. Grease a ring-tin with butter or oil and then flour it well.
  • In a large bowl, whisk together the oil, eggs, passionfruit, yoghurt and sugar.
  • Sift the flour into the mixture and then gently stir it in until the batter is smooth.
  • Spread the batter into the prepared tin.
  • Bake the cake for 35 minutes or until a cake-tester inserted in the middle comes out clean.
  • Leave the cake to rest in the tin for 5 minutes before transferring it to a wire rack to cool for 20 minutes
  • Make the icing by combining the passionfruit with the icing sugar.
  • Drizzle it over the warm cake.
  • Serve warm.

    This receipe is impossible to muck up. It is so quick and easy. I often make the receipe into cupcakes and apply the icing with a pastry brush.

    You're not the only Desperate Housewives lover, I love the show too. I'm so sad this is the last season. I don't want it to end as it's one show always guaranteed to make me laugh.

    Your passionfruit cake looks wonderful! I'd never even thought to transport a cake interstate on a plane. I'm glad it survived, even if it was a little battered. Have you tried Donna Hay's Passionfruit Syrup cake? It's a yoghurt cake too, but with a hot syrup poured over the top. It's divine (recipe is on my blog if you want to look for it).

      Wow I never knew there were so many fans out there! I haven't tried it but I will now. Thank you for that. I'm hoping they have some more passionfruit at the markets tomorrow. The ones I got were huge and so sweet.

    You are so funny Claire, again like me, I'm always dragging food around the country when I go to visit someone! But I want to know, did you cut the slice before or after you brought it to your friend, that is always my dilemma! : I don't want to look rude and slice into some else's cake but I hate to not get the photos, oh dear, what's a girl to do? :) BTW, the cake looks amazingly delicious, so moist and tall!

      That's always my dilemma too! In this case I didn't cut it, I took the photo when we sat down to eat it the next day. I have told people to expect a slice already cut when I give them cakes. I think it's a small price to pay for home-baked goodies.
