Easy Passionfruit Yoghurt Cake

A simple and deliciously moist Easy Passionfruit Yoghurt Cake recipe perfect for morning tea or freezing for snacks and lunchboxes.

This receipe is impossible to muck up. It is so quick and easy. I often make the receipe into cupcakes and apply the icing with a pastry brush.

I am a very big fan of one-bowl cakes and this one definitely does not disappoint. You can use the same recipe to make any sort of citrus cake just substitute the passionfruit pulp for juice and zest.

Recipe Ingredients

Ingredients in Easy Passionfruit Yoghurt Cake - Bottle of oil, eggs, sugar, passionfruit, bowl of baking powder, flour and youghurt on white marble bench.
  • Oil - I used olive oil but you could also use coconut oil or even melted butter.
  • Passionfruit pulp - use fresh passionfruit or tinned passionfruit syrup/passion fruit puree.
  • Sugar - we used raw sugar but you can use regular or caster sugar or rapadura sugar.
  • Yoghurt - can also be substituted with sour cream or regular cream with a little lemon juice added. For dairy free you can use coconut cream with lemon juice added.
  • Flour - use plain, wholemeal or spelt flour.  
  • Icing sugar - also called confectioner's sugar. Here's how to make your own icing sugar.

How To Make Easy Passionfruit Yoghurt Cake

This yogurt cake with passionfruit glaze is seriously easy to make. 

A greased, lined and floured white cake tin and large bowl with sugar, passionfruit, yoghurt and eggs being mixed to make passionfruit yoghurt cake.

Step 1 - Grease, line and flour a round cake tin (here's how to grease and line a tin). I used a 20cm one for a tall cake. Alternatively use a 24/25cm regular round tin. You can also use a ring tin or a loaf tin.

Step 2 - Use a whisk to combine the oil, sugar, passionfruit, yoghurt and eggs in a large bowl.

Mixing flour into wet ingredients for passionfruit yoghurt cake in a large glass bowl and round tin with the cake batter.

Step 3 - Sift in the flour and baking powder and mix it in until smooth.

Step 4 - Transfer the batter to the prepared tin and bake at 180C fan-forced for 35 minutes (or until a cake tester inserted in the middle comes out clean). A smaller tin (like the 20cm one I used) will need a little more baking time.

Step 5 - Leave the cake to rest in the tin for 5 minutes.

Step 6 - Transfer to a wire rack to cool.

Cup with icing sugar and passionfruit pulp to make icing for passionfruit yoghurt cake.

Step 7 - Straight away make the icing by combining the passionfruit and icing sugar.

Step 8 - Pour it over the cake while it is still warm.

Step 9 - Leave the icing to settle into the cake for a little bit.

Step 10 - Enjoy warm or at room temperature.

See, I told you it was seriously simple.

I always put a little bit of cake batter in a cupcake tin so I can taste it before serving to others. 

Just in case my brain has gone a little crazy and I've done something crazy like mix up the sugar and sea salt! 

This recipe works well for cupcakes too.

Store the cake in an airtight container.

Can I use tinned passionfruit pulp to make Easy Passionfruit Yoghurt Cake?

Absolutely. You can also use frozen passionfruit pulp.

What can I use instead of yoghurt in Easy Passionfruit Yoghurt Cake?

Instead of yoghurt you can use sour cream or regular cream with a little lemon juice added. For dairy free you can use coconut cream with lemon juice added.

Ingredients

Cake

  • ¾ cup 180ml vegetable oil - I used olive oil
  • 2 eggs
  • ¼ cup passionfruit pulp
  • 1 cup thick natural yoghurt - I used Greek yoghurt
  • 1 cup caster superfine sugar
  • 2 cups plain flour
  • 4 teaspoon baking powder

Icing

  • ¼ cup passionfruit pulp
  • approximately 3 tablespoon icing sugar

Instructions

  • Pre-heat the oven to 180C fan-forced. Grease a ring-tin with butter or oil and then flour it well.
  • In a large bowl, whisk together the oil, eggs, passionfruit, yoghurt and sugar.
  • Sift the flour & baking powder into the mixture and then gently stir it in until the batter is smooth.
  • Spread the batter into the prepared tin.
  • Bake the cake for 35 minutes or until a cake-tester inserted in the middle comes out clean.
  • Leave the cake to rest in the tin for 5 minutes before transferring it to a wire rack to cool for 20 minutes
  • Make the icing by combining the passionfruit with the icing sugar.
  • Drizzle it over the warm cake.
  • Serve warm.

Notes

Yoghurt can be substituted with sour cream or regular cream with lemon juice added. For dairy-free use coconut cream and lemon juice.

    You're not the only Desperate Housewives lover, I love the show too. I'm so sad this is the last season. I don't want it to end as it's one show always guaranteed to make me laugh.

    Your passionfruit cake looks wonderful! I'd never even thought to transport a cake interstate on a plane. I'm glad it survived, even if it was a little battered. Have you tried Donna Hay's Passionfruit Syrup cake? It's a yoghurt cake too, but with a hot syrup poured over the top. It's divine (recipe is on my blog if you want to look for it).

      Wow I never knew there were so many fans out there! I haven't tried it but I will now. Thank you for that. I'm hoping they have some more passionfruit at the markets tomorrow. The ones I got were huge and so sweet.

    You are so funny Claire, again like me, I'm always dragging food around the country when I go to visit someone! But I want to know, did you cut the slice before or after you brought it to your friend, that is always my dilemma! : I don't want to look rude and slice into some else's cake but I hate to not get the photos, oh dear, what's a girl to do? :) BTW, the cake looks amazingly delicious, so moist and tall!

      That's always my dilemma too! In this case I didn't cut it, I took the photo when we sat down to eat it the next day. I have told people to expect a slice already cut when I give them cakes. I think it's a small price to pay for home-baked goodies.
