Today is an exciting day and a very sad day for today is the release of the last movie in the Harry Potter series. I can't wait to see the movie but I'm also sad that it's the end of such a fantastic series. To mark the tremendous event, of course I had to create something in the kitchen. I came across a picture of these cookies on Pinterest and created them from there.
I'm a rather lazy cook so when I can think of a shortcut I take it. Instead of having to cut out the circles for the owls I looked for a refrigerator recipe where you form the dough into a roll and cut ready-made circles from it. There were just 3 ingredients in this recipe and I added the spices. I have no idea what's actually in it but I imagine Butter Beer from Harry Potter to have cardamon and ginger flavours.
Start by beating the icing sugar and butter together until they are smooth, light and creamy.
Add a little of the flour and spices and stir them through. I tried to make the dough using the dough hook but you really have to get your hands in there and squish everything together after you add the rest of the flour.
Roll the dough into a log about 2.5cm thick. Cut off the rough ends and roll them into two smaller logs.
Wrap the logs in plastic wrap and refrigerate for at least one hour. The dough can also be frozen for up to 3 months.
Cut the log into even slices and place them on a lined baking tray. Cut the small log into double the number of pieces as the larger one.
Press two smaller circles onto the top of each big one to make the eye sockets and press a fork into the bottom of each one to form the feet.
Press a chocolate chip into each eye socket to form the eyes.
Press an almond between the eyes to form the beak. Bake the cookies at 160C fan-forced for 10-12 minutes or until they start to turn golden.
Leave the baked cookies to rest on the tray for at least 5 minutes.
Transfer the cookies to a wire rack to cool completely. I had a little dough left over so I made a pair of Harry's glasses, a broomstick and Harry's lightening bolt scar.
Gobble them up. Enjoy!

- 125 g ½ cup butter, softened
- ½ cup 80g icing sugar
- 1 ¼ cup 187g plain AP flour
- 40 pcs dark chocolate chips
- 20 whole almonds
- ½ teaspoon cardamon
- ½ teaspoon cinnamon

- In the bowl of an electric mixer, beat the butter and icing sugar together until they are smooth, creamy and light.
- Stir the sifted flour and spices into the mixture in two lots.
- Press the dough together in the bowl then turn out onto a lightly floured surface and knead it until smooth.
- Roll the dough into a log about 2.5cm in diameter. Cut a piece from each end to neaten them up and roll the pieces into skinny logs.
- Wrap each log in plastic wrap and refrigerate for at least one hour.
- Pre-heat the oven to 160C fan-forced.
- Cut the large log into 20 rounds and place on a lined oven tray.
- Cut the smaller logs into 40 pieces and press 2 pieces to the top of each of the big rounds.
- Press a chocolate chip into each small round to form eyes and an almond between the eyes to form a beak.
- Press the prongs of a fork into the bottom of each biscuit to form feet.
- Bake the cookies for approximately 12 minutes.
- Let the baked cookies rest on the tray for 5 minutes then transfer them to a wire rack to cool completely.
