Pretty much the only cooking I've been doing this week has been for Baked Relief. I have such a supply of cooked meals in the freezer I decided I'd have a week off cooking so I could bake up a storm and help out. With so much sweet stuff being passed around, I thought something a little bit nutritious might go down well with the volunteers. I don't know about you but if I ate a whole lot of sugar early in the morning the sugar coma would fall upon me at about midday which is not great when you have a lot of work to do.
I adjusted a recipe I found on Kidspot Kitchen for muesli bar slice. I actually only just realised now that it says slice not muesli bars but it did the trick. You could make fruit-free bars if you're not a fan of dried fruit. Just use fruit-free muesli (my favourite is Carmen's) and replace the sultanas with either more muesli, nuts, seeds or for a naughty treat - chocolate chips.
The first step is to mix up the muesli, sultanas (or nuts, seeds or chocolate) and flour in a big bowl.
Microwave the butter, sugar and honey for one minute and mix until combined. If you want to reduce the calories and fat, use a low-fat spread in place of the butter.
Pour the microwave mixture into the dry ingredients.
Then add the egg and milk and mix it all up until it's well combined. Another tip for reducing the calories and fat - use two egg whites instead of 1 whole egg and low-fat milk.
Make sure it's all really well mixed in or parts of it will crumble when you cut the bars at the end.
Spread the mixture into the tin and press it down with the back of a spoon. Bake the bars for 15 minutes or until golden.
The recipe didn't say but I left mine in the tins to cool.
When they're cool, cut them up into bars and enjoy! Homemade muesli bars freeze very well. I wrap them in alfoil and freeze individually. They defrost in a couple of hours making them the perfect morning tea for work or school if you take them out in the morning.

Ingredients
- 3 ¾ cups muesli
- 1 cup sultanas you can use more muesli or add nuts if you're not a dried fruit fan
- ¼ cup plain flour
- 60 g 2oz butter or margarine
- ¼ cup honey
- 2 tablespoons brown sugar
- 1 egg
- ¼ cup milk
Instructions
- Pre-heat the oven to 180C/360F fan-forced. Grease and line one big rectangular tin or two smaller ones.
- In a large bowl mix together the muesli, flour and sultanas.
- Melt the butter or margarine, honey and brown sugar in the microwave for 1 minute and add to dry ingredients. Stir in the egg and milk until well combined.
- Press into the tin and bake for 15 minutes at 180C/360F fan-forced. I used two shallow tins for mine to make them the right height for bars.
- Cut into bars when cooled.

I tried with another recipe I found online but it was a disaster, wouldn't stick together at all...so with what I had leftover I decided to give this one a go (since it looked like it had better sticking power with the egg and flour elements).
Worked a treat even for a newbie baker like me - lovely texture and not too sweet, just oaty and fruity. A proper breakfast bar for cereal on the go.
