These scrolls smelled amazing while they were baking! It took all my power not to gobble them all up straight out of the oven. It seems I have a little obsession with dough-based baking at the moment - tortillas, naan, bread maker bread and now cinnamon scrolls. These little babies not only taste great but are great on your wallet too. I worked out they cost about $3 for the ingredients and you get 18. Considering you'd pay at least $2 for one in a bakery 6c each sounds like a good deal to me.
First, you need to mix the yeast, sugar and water and set aside to froth. It takes about 10 minutes.
When it's frothed it should look something like this. The complete opposite of a good beer.
While the yeast is frothing, sift the flour and add the salt to it.
When the yeast mixture is frothed, add it, the butter and milk to the flour and stir until it all comes together.
Turn the dough out onto a floured surface and knead it for about 5 minutes until it's smooth and elastic. That basically means when it's an even consistency and it bounces back when you stretch it out.
Place the dough in a well-oiled boil, cover and set aside to rest for about an hour. Please note the well in well-oiled. I missed this and lost a bit of dough to the bowl.
This is what mine looked like after an hour. It was ready to jump out of the bowl.
Turn it out onto a floured surface and knead it again for about five minutes. Roll it out into a big rectangle (as even as you can get it).
Spread the dough with melted butter. I used low-fat spread here in an attempt to lower the calories.
Spread the buttered dough with brown sugar and cinnamon (or nutella if you prefer). After making this once I think you could use whatever you like inside. Some cheesey combination will be my next experiment.
Carefully roll the dough up from the long side. The recipe is for a loaf which I have adjusted to be individual scrolls. If you want to make a loaf, roll from the short end and use a loaf tin.
Cut the roll into 18 pieces and place them in a lined roasting tin with a little space between each one. Cover and leave them to rest for about 40 minutes.
This is how much they grow!
Brush the scrolls with milk and sprinkle with icing sugar. Bake in a 200C/390F (fan-forced) oven for 8 minutes then turn the temperature down to 160C and bake a further 18 minutes.
Yum yum yum!!!
Remove to a wire rack to cool (if they last that long).
Bag them up just like the bakery. Enjoy!

Cinnamon Scrolls
Ingredients
- 2 teaspoon 7g (¼oz) dry yeast
- ¼ teaspoon sugar
- ½ cup warm water
- 3 cups plain flour
- 1 teaspoon salt
- ⅔ cup warm milk
- 40 g 1oz butter
- 2 teaspoon butter melted extra
- ⅓ cup nutella and 2 teaspoon sugar or ⅓ cup of brown sugar I used brown sugar
- 1 teaspoon ground cinnamon
Instructions
- Combine yeast, sugar and water and whisk until yeast has dissolved. Cover the mixture and stand it in a warm place about 10 minutes or until the mixture is frothy.
- Meanwhile, sift flour and salt into a large bowl. Add milk, butter and yeast mixture and mix until it forms a soft dough. Knead the dough on a floured surface for about 5 minutes then place in a well oiled bowl, covered for 1 hour or until it has almost doubled in size.
- Line a baking dish with baking paper (or you can oil it).
- Turn the dough onto a floured surface and knead until smooth. Shape the dough into a 20 x 26cm rectangle. Brush the dough with melted butter then spread with nutella/sugar or brown sugar and sprinkle with cinnamon. Roll it up from the long side and cut into 18 pieces.
- Place the rolls flat into the baking tray with some room in between each one. Cover and stand them in a warm place for about 40 minutes.
- Pre-heat the oven to 200C (390F) fan-forced.
- Brush scrolls with milk and sprinkle with icing sugar. Bake scrolls for 8 minutes then turn the temperature down to 160C (320F) and bake for a further 18 minutes.
- Remove to a wire rack to cool.

Ooh cinnamon scrolls always remind me of Christmas, I'm not sure why! Maybe it's being on holidays and whipping up a batch :D They look fantastic!

Thanks Lorraine. I can very truthfully say these were fantastic. I get the cinnamon/Christmas connection too. I think it's because we had a Christmas tree spray that smelled of cinnamon. It made the house smell like Christmas the second you walked in the door!
