Ingredients

dried spiral pasta
▢

cup
pesto sauce (I made my own
▢

tablespoon
olive oil
▢

feta
crumbled
▢

small sweet potato
diced and roasted
▢

g
rocket or baby spinach leaves
▢

cup
toasted pinenuts
optional
Instructions
Cook the pasta according to the instructions on the packet.
Drain, leaving a little bit of water and transfer it to a big bowl.
Stir through the pesto sauce and olive oil.
Leave to cool to room temperature, stirring occasionally so the pasta doesn't stick together.
Toss through the feta, sweet potato, rocket and pinenuts and chill until serving.
