Christmas stuffed mushrooms

Ingredients

  • 1 teaspoon olive oil
  • 1 small onion diced
  • 2 cloves garlic crushed
  • 1 teaspoon butter
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon brown sugar
  • 4 tablespoon bread crumbs
  • 1 egg lightly beaten
  • 4 button mushrooms diced finely
  • ½ cup cooked barley
  • salt and pepper
  • 4 tea cup sized flat mushrooms
  • whole cloves

Instructions

  • Heat the oil in a small frying pan and saute the onions until soft.
  • Add the garlic and cook for one minute and then add the butter and stir through until melted.
  • Transfer to a large bowl to cool.
  • Pre-heat the oven to 180C fan-forced and line a tray with baking paper.
  • To the onion bowl, add everything but the field mushrooms and cloves and mix to combine.
  • Divide the mixture between the mushrooms and press onto the top of each one.
  • Press cloves into the mixture.
  • Bake for 20-25 minutes or until crunchy and golden on top.
  • Remove the cloves and serve with extra thyme and condiments of your choice
