Ingredients

  • 2 free-range eggs
  • 1 cup honey
  • 2 tablespoon olive oil
  • ½ teaspoon vanilla bean paste
  • 5 tablespoon milk
  • 1 ½ cups plain AP flour
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 300 g fruit - I used 1 large banana mashed, 1 large passionfruit and 150g raspberries

Instructions

  • Pre-heat the oven to 180C (390F) fan-forced and grease and line a loaf tin so the paper extends up over the long sides.
  • In a medium bowl, whisk together the eggs, honey, olive oil, vanilla and milk until smooth.
  • In a large bowl, whisk the flour, oats, baking powder and baking soda together.
  • Fold the wet ingredients into the dry then fold through the mashed banana, passionfruit and raspberries.
  • Spread the batter into the tin and bake for 50 minutes to 1 hour or until a cake tester comes out clean.
  • Leave to cool completely in the tin.
