- 2 free-range eggs
- 1 cup honey
- 2 tablespoon olive oil
- ½ teaspoon vanilla bean paste
- 5 tablespoon milk
- 1 ½ cups plain AP flour
- ½ cup rolled oats
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 300 g fruit - I used 1 large banana mashed, 1 large passionfruit and 150g raspberries
Pre-heat the oven to 180C (390F) fan-forced and grease and line a loaf tin so the paper extends up over the long sides.
In a medium bowl, whisk together the eggs, honey, olive oil, vanilla and milk until smooth.
In a large bowl, whisk the flour, oats, baking powder and baking soda together.
Fold the wet ingredients into the dry then fold through the mashed banana, passionfruit and raspberries.
Spread the batter into the tin and bake for 50 minutes to 1 hour or until a cake tester comes out clean.
Leave to cool completely in the tin.
