Ingredients

  • 2 cups wholemeal spelt flour or regular wholemeal flour
  • 4 teaspoon baking powder
  • ½ cup rapadura sugar
  • 1 teaspoon ground cinnamon
  • ¾ cup apple puree
  • ¼ cup olive oil
  • 1 egg
  • 1 cup milk

Instructions

  • Preheat the oven to 180C fan-forced and grease and/or line a 12 hole muffin tin.
  • Combine all the dry ingredients in a large bowl.
  • Combine all the wet ingredients in a separate bowl.
  • Make a well in the middle of the dry ingredients and gently fold the wet ingredients in.
  • Divide the mixture between the holes in the tin.
  • Bake for 18 minutes or until a cake tester inserted in the middle comes out clean.

Notes

You can make thees into chocolate chip muffins by replacing the cinnamon with 3 teaspoons of raw cacao powder and adding ½ a cup of chocolate chips.
