Ingredients

cups
wholemeal spelt flour
or regular wholemeal flour

teaspoon
baking powder
½
cup
rapadura sugar

teaspoon
ground cinnamon
¾
cup
apple puree
¼

olive oil

egg

milk
Instructions
Preheat the oven to 180C fan-forced and grease and/or line a 12 hole muffin tin.
Combine all the dry ingredients in a large bowl.
Combine all the wet ingredients in a separate bowl.
Make a well in the middle of the dry ingredients and gently fold the wet ingredients in.
Divide the mixture between the holes in the tin.
Bake for 18 minutes or until a cake tester inserted in the middle comes out clean.
Notes
You can make thees into chocolate chip muffins by replacing the cinnamon with 3 teaspoons of raw cacao powder and adding ½ a cup of chocolate chips.
