Super easy vanilla gelato recipe from my ice-cream machine's manual

Ingredients

  • 2 ½ cups of milk next time I would probably reduce the milk by half a cup and up the cream by half a cup
  • ½ cup cream
  • 260 g 9oz eggs (I used 5)
  • ½ cup sugar
  • 1 teaspoon vanilla extract I used vanilla bean paste

Instructions

  • Place all the ingredients in a blender and blend until smooth.
  • Pour the mixture into a bowl and refrigerate for 2 hours.
  • Pour the chilled mixture into the ice-cream maker and churn until it reaches the desired consistency.
  • Transfer it to a container and freeze.
  • Gelato will keep for up to 5 days in the freezer.
