- 2 cups desiccated coconut
- 12 medjool dates seeds removed
- 1 teaspoon vanilla bean paste
- A pinch of salt
Combine the ingredients in the bowl of a food processor and process until fine.
Line the base and sides of a loaf tin and press the mixture in, smoothing it out with a spoon.
Refrigerate for at least two hours to set and then cut into squares.
Store in the fridge.
