Irish potato sweets

Irish potato candy (or candy spuds) are the perfect way to end a St Patrick's Day celebration with a little something different.

Ingredients

  • ¼ cup butter softened
  • 120 g cream cheese
  • 1 teaspoon vanilla extract
  • 3-4 cups icing sugar
  • 2 ½ cups desiccated coconut
  • 1 tablespoon ground cinnamon
  • ½ tablespoon cocoa powder

Instructions

  • Place the butter and cream cheese in the bowl of an electric mixer and beat until smooth and pale.
  • Add the vanilla and mix it in.
  • About half a cup at at time, add the icing sugar until the mixture is thick (I used 3 ½ cups).
  • Add the coconut and mix it in.
  • In a small bowl, mix the cinnamon and cocoa together.
  • Shape the mixture into little 'potatoes' and then roll each one in the cinnamon cocoa.
  • Refrigerate for 30 minutes to set and keep refrigerated until serving.
