Ingredients

cup
peanut butter - smooth or crunchy or a combo if you can't decide

raw sugar

cup
coconut sugar
or just more raw sugar

large free-range egg

coconut flour

teaspoon
cinnamon

teaspoon
baking powder
▢
3
squares of best-quality super-dark chocolate
finely chopped
Instructions
Pre-heat the oven to 160C (350F) fan-forced and line two baking sheets with baking paper.
In a medium bowl, mix together the peanut butter and egg.
In another bowl, combine the sugars, coconut flour, cinnamon, baking powder and chocolate.
Stirring with a wooden spoon, add the dry ingredients to the wet and mix until it forms a dough.
Roll 1 tablespoon of dough at a time into balls and place on the trays leaving 3cm (2") between each one.
Use a fork to press the dough down and then press the other way to make a crossed pattern.
Bake the biscuits for 9-11 minutes or until firm on the outside.
Remove the tray from the oven and leave to rest for 5 minutes then use a spatula to transfer the biscuits to a wire rack to cool completely.
