Place the macadamia nuts in a food processor or Thermomix and process to a fine crumb. Be careful not to over-process or you will end up with macadamia butter which is delicious but not what you want.
Add the remaining ingredients to the machine and mix until combined.
Heat a large frying pan over medium heat and cook about one tablespoon of batter at a time. It is ready to flip when bubbles start to appear on the surface and pop.
Serve warm or leave to cool to room temperature and freeze.
