Ingredients

  • 300 g 11oz macadamia nuts
  • ¼ teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 2 free-range eggs
  • ½ cup coconut milk
  • 50 g 2oz frozen mixed berries, defrosted
  • Coconut oil

Instructions

  • Place the macadamia nuts in a food processor or Thermomix and process to a fine crumb. Be careful not to over-process or you will end up with macadamia butter which is delicious but not what you want.
  • Add the remaining ingredients to the machine and mix until combined.
  • Heat a large frying pan over medium heat and cook about one tablespoon of batter at a time. It is ready to flip when bubbles start to appear on the surface and pop.
  • Serve warm or leave to cool to room temperature and freeze.
